Oude Kriek 3 Fonteinen is produced by ripening of cherries (both the flesh and the seeds) in young Lambic. This process takes between 6 to 8 months. After bottling the beer matures for at least 4 months in a warm room where the spontaneous fermentation in the bottle is done.
The head of Oude Kriek is very sensitive to the concentration of the cherry seeds containing oil and may differ from one year to the other.
On old Cherry 3 Fonteinen, no flavorings, sweeteners, or dyes added which makes this beer very natural and is especially thirst quenching.

Note: Recent labels may show the beer to contain 35% of Schaerbeekse Krieken.

Am Gaumen extrem intensive Kirschnoten, Kirschkerne, Sauerkirsch, Himbeer, Zitronensaft, Eiche, Rotwein, Tannine, dunkle Trauben. Mundgefühl sehr smooth, wenig Karbo, trocken, ziemlich sauer, sehr gutes KRiek.

Drank next to De Cam Oude Kriek, 22 May 2014 bottle. Deep red with a white thick head. Aroma of cherry candy lemon, light farmhouse, lemon. Taste of cherry, a bit watery, light funk, cough drop aftertaste, very simpleminded and cherry juice like. This was sooo much less complex and interesting compared to the De Cam.

Bij van Moll, met gazpacho. Rozerode kriek. Nauwelijks schuim, zure geur. Zoals je een oude kriek verwacht, lekker friszuur!

Bottle, bottled 22.05.14, enjoyed one year after. Pours dark red, with a short lived creamy head. Aroma is sour with lactic acid, tart fruity farmhouse notes with cherries, currents and apples, as well as bretty notes of wood. Full body, with average carbonation. Flavour is sour with lactic acid, tart fruity notes of cherries and berries, wooden barrels with brett and tannins, Lingering tart earthy farmhouse notes.

Resampled, 37,5 bottled 06/2013. Beautiful hazy ruby pour with quickly receding pinkish foam. Medium lively carbonation brims forth from the glass: a young yoghurt and cherry asperine tartness, sour cherries mixed in with yoghurt, in a bowl beneath a soil-stained cloth - not overly expressive. Straightforward cherry whey, lighter cherry pit bitter almond and a whiff of a smaller, once-cleaned barn, before natural, citric lemonade takes over to quench the thirst, more faint 1,5% fat yoghurt in finish. - Quite a simple homely joy really, that has become the focus for many brett-bewildered analysts taking enthusiased notes from an over-sanitised vantage point, somewhere in der gedeuteten Welt.
