Oude Kriek 3 Fonteinen is produced by ripening of cherries (both the flesh and the seeds) in young Lambic. This process takes between 6 to 8 months. After bottling the beer matures for at least 4 months in a warm room where the spontaneous fermentation in the bottle is done.
The head of Oude Kriek is very sensitive to the concentration of the cherry seeds containing oil and may differ from one year to the other.
On old Cherry 3 Fonteinen, no flavorings, sweeteners, or dyes added which makes this beer very natural and is especially thirst quenching.

Note: Recent labels may show the beer to contain 35% of Schaerbeekse Krieken.

Bottle at Bobís Bar during the "Inaugural Bobís Bar Sour Spectacular!" on 02/12/2016. The beer pours a ruby-red color with a medium pinkish-white head that evaporates steadily to a wispy film. Short strings of lacing on the glass. The aroma consists of tart fruit, yeast and malt. Light to medium body with a tart cherry character and flavors of earthy yeast and malt. The finish is fruity with a sour cherry aftertaste. Pretty good all around.

375ml bottle @ Chez Sophie, Shrewsbury. Pours blood red with thin receding pink head. Aroma has that great thorny oak barrel with residual cherry aroma expected of a good oude kriek. Taste is lightly coarse with tart, prickly cherries and faint funk. A soft dry silkiness on the finish. Beautiful.

Pours red with a pink-tinged head. Nose shows heavy funk and elderflower notes with massive cherry after. Awesomely acidic flavours. Massive cherry too, some soft sweetness underneath. Lively carbonation, feels like drinking sherbet.

(750ml bottle at ~1 year bottle age, from Systembolaget web order) Pours a nearly clear dark red pink with a very rapidly dissipating loose pale pink head, and no lace. Aroma is deep and earthy for a kriek, with cherry flesh and pit, a bit of tannic skin, dry twigs, some mulchy, earthy barnyard and manure funk, wet vegetation, lightly acidic. Palate is very dry and the tartness is minimal at best, but extremely high effervescent champagne carbonation is washing out the flavours. Lightly tart cherry flesh, skin, light wood, dry earth, very soft lactic yoghurt character. A little marzipan in the finish. Silky light-medium body with mouth filling carb. Surprisingly not very tart for style, but not very jammy either. Maybe my least favourite 3F fruit lambic, but itís losing out to very very good beers.
