Oude Kriek 3 Fonteinen is produced by ripening of cherries (both the flesh and the seeds) in young Lambic. This process takes between 6 to 8 months. After bottling the beer matures for at least 4 months in a warm room where the spontaneous fermentation in the bottle is done.
The head of Oude Kriek is very sensitive to the concentration of the cherry seeds containing oil and may differ from one year to the other.
On old Cherry 3 Fonteinen, no flavorings, sweeteners, or dyes added which makes this beer very natural and is especially thirst quenching.

Note: Recent labels may show the beer to contain 35% of Schaerbeekse Krieken.

Bij van Moll, met gazpacho. Rozerode kriek. Nauwelijks schuim, zure geur. Zoals je een oude kriek verwacht, lekker friszuur!

Resampled, 37,5 bottled 06/2013. Beautiful hazy ruby pour with quickly receding pinkish foam. Medium lively carbonation brims forth from the glass: a young yoghurt and cherry asperine tartness, sour cherries mixed in with yoghurt, in a bowl beneath a soil-stained cloth - not overly expressive. Straightforward cherry whey, lighter cherry pit bitter almond and a whiff of a smaller, once-cleaned barn, before natural, citric lemonade takes over to quench the thirst, more faint 1,5% fat yoghurt in finish. - Quite a simple homely joy really, that has become the focus for many brett-bewildered analysts taking enthusiased notes from an over-sanitised vantage point, somewhere in der gedeuteten Welt.

It pours hazy violet with ruby highlights; the head is magenta and foamy. The aroma has notes of: red cherries, cough medicine, and lemon juice. The taste is heavy sour; there are notes of: lemon juice, funk, and lemon juice. The palate is full bodied and has medium carbonation, with a light astringency, and it has a medium finish. Overall, straight from the grim reaper ’ s cherry tree.
