Oude Kriek 3 Fonteinen is produced by ripening of cherries (both the flesh and the seeds) in young Lambic. This process takes between 6 to 8 months. After bottling the beer matures for at least 4 months in a warm room where the spontaneous fermentation in the bottle is done.
The head of Oude Kriek is very sensitive to the concentration of the cherry seeds containing oil and may differ from one year to the other.
On old Cherry 3 Fonteinen, no flavorings, sweeteners, or dyes added which makes this beer very natural and is especially thirst quenching.

75cl bottle at home, 1996 vintage. This bottle was corked, capped and very dusty. The cork was very long...so long that I lost the end of it into the beer. The pour produced a crystal clear bright ruby beer with still a huge amount of colour remaining (almost as much as a new bottle). The smell was fantastic! No oxidisation at all and I mean none!! It smelled of cinnemon, nutmeg, clove and cherry. Almost like a christmas spiced beer. Everyone that tried it said that they had never experienced a Kriek with such a christmas flavour. As we went down the bottle the sourness was more pronounced and the pours where becoming very murky. There was a huge amount of sediment in this bottle. This may well be the most gracefully aged beer Ive ever had. Everyone agreed that it could easily last another 10 years.

375 mL bottle. Bottled December 14, 2007. Originally reviewed 10/16/2011. Murky ruby body with a miniscule head. Retention is poor and Im left with a ring around the surface and not much more. Musty, funky, rife with barnyard aromas. This is why I love Drie Fonteinen lambics; theyre funk-forward. There is an acidity that carries a hint of cherry. Right up front, I do get a sour cherry flavor, but it fades to funkiness and oak quickly. The middle is very much a hay and wood flavor, with a healthy dose of funk. The cherries return in the finish. Its a battle between horseblanket and cherries that the cherries eventually win through a lasting tartness. Maybe not as effervescent as Id like it to be and the sourness does fatigue the palate just a bit. Im being nitpicky, but its true. The carbonation isnt as high as the Oude Gueze, but its still substantial enough to avoid complaint. I love lambics with a lot of funk to them and this one delivers as all the Drie Fonteinen lambics seem to do. The acidity is still strong, but enjoyable. Good stuff and I look forward to comparing it to the Schaerbeekse I have stashed away.

Pours a clear burgundy with a pink head that leaves good lacing. Nose is of cherries, rubber and oak. Some cherry pits, too. Taste is moderately tart and really dry, offers more sour cherries. Lightly tannic. Body is light to medium, carbonation moderate and mouthfeel just really vinous. A really nice oude kriek, 3F is really the best one to do it!
