COMMERCIAL DESCRIPTION
Dark double-malt top-fermented chestnut honey beer, bottle conditioned.

Appearance: beige, compact, persistent and fine head, dark liquid, no suspended solids but possibly a yeast cloud; fine perlage.

Bouquet: pronounced chestnut honey, balsamic, bitter herbaceous, cured, light caramel aromas, hint of ethyl alcohol when warm.

Flavour: predominance of chestnut honey, cured, bitter herbaceous sensations, gentle acidity due to the roasted barley, caramel. Complex bitterness coming from the combination of honey, roasted barley and hop. Full bodied.

Type of beer: honey beer (limited production speciality obtained from wort prepared at the end of July with chestnut honey from Monte Grappa).

Alcohol content: 8 %

Excellent with: soft ripe cheeses with a strong aroma and flavour, cheesecake, assorted cured and smoked cold meats.

Serving temperature: 10-12 °C

Leave the beer to “oxygenate” after having poured it out (its excess of aroma must be released).

Clear medium to dark amber - red brown color with a large, frothy to creamy, good lacing, mostly to fully lasting, beige head. Aroma is moderate to heavy dark honey, honey, moderate flowers, artificial flowers, caramel. Flavor is light heavy sweet and moderate bitter with a long duration, honey. Body is medium to full, texture is oily and smooth, carbonation is soft. [20110416]

Bottle 75 cl. Courtesy of fonefan. Pours a clear warm amber with a creamy beige head. The nose is delicious and intense dark honey - very sophisticated. Solid body, very sweet caramellish maltiness with lovely and delicate honey notes, brown sugarish. Very fruity. The pronounced sweetness may become a little much but this is a very sophisticated honey beer. 160411

Bottle, 75cl corked, courtesy of fonefan. An almost clear one, dark copper colored beer with a dense, off-white to beige head. Soapy, flowery honey aroma with something woody. Caramel and a spiced touch as well. The aroma smoothens out after some time in the glass, it’s pretty intense at first. The flavor is sweet and honeyish, with flowers, some bitterness and a herbal touch, finishing sweet, bitter and honeyish. A bit too alcoholic all the way, but it suits the beer quite well. A very strange beer that I like really well after the initial intense aroma had smoothened. 110416

Bottle @ Ulfborg Easter Tasting, 2011. Pours dark unclear brown with a small creamy white head on top. Nose is sweet honey , candy and sugar. Sweet and cloying. Not bad, just sweet and one dimensional. Honey is not a fav.

Bottle @ fonefan tasting. Nice head with good duration. Color is dark amber. Aroma and taste are honey, bubblegum, caramel, flowers, malt and hops.
