COMMERCIAL DESCRIPTION
Copia is the Roman Goddess of Abundance. We decided to name this saison Copia to represent the abundance of hops used in this beer. In every five gallons brewed, we used four pounds of Sorachi Ace wet hops. Copia is a traditional saison with a huge bouquet of fresh citrus. 5.7 percent alcohol by volume. 35 IBU.

Sampled at Schlafly Fresh Hop fest - Pours hazy golden/orange with a dense white head. The aroma is very fruity and lemony along with some earth and funky saison yeast. Medium sharp grainy body. The taste is like the aroma and is fairly dry. The finish is powdery and chalky. Nice hoppy saison.

Draft at schlaflys fresh hop festival. Pours Golden with a nice white head. Aroma is fresh hops, citrus, lemon, pale malts, pineapple and funk. Flavor is along the same lines. Light bodied with medium carbonation. Has a nice fruity finish.

Draft at the 2011 Fresh Hop Festival at Schlafly Bottleworks. Pours a bright gold color with a small white head and just a little bit of cloudiness. "Huge bouquet of fresh citrus", indeed. Good lord. This explodes with lemon and tangerine, along with pineapple, spices, fresh grains, pale malts, straw, and just a wee bit of funk. Flavor follows suit, but is dialed down in comparison. Also brings some melon and apricot. Light-bodied, with moderate carbonation and a smooth, fruity mouthfeel. Great saison and can’t wait to try more from this brewery.
