COMMERCIAL DESCRIPTION
Our 8% signature Scotch Ale sports a smooth complex malt character with a slight roasted note, sweet balance and subtle hop finish. What could possibly make this beer more enjoyable? Bacon, of course. Whole leaf Hallertau hops, hickory chips and bacon were smoked with staves from our Heaven Hill Bourbon barrel, then added to the cask before secondary fermentation.

Catching up on some old notes here. Sweetness and flat cola flavors working through, pretty straight to style there. The bacon and smoke start to overpower after a couple of sips though. Would love to see a little more balance between the sweet and smokey flavors. Bacon lovers unite though.

Amber/brown pour with tan head and lace. Bacon grease of course with pepper and sweet malt. Flavor mirrors aroma. Medium/light bodied but a tad thin. Unusual and drinkable.

Appearance: Served up a reasonably clear, dark amber-hued body with a scant ring from lack of head formation. Smell: Unremittingly smokey, with a scent smelling less of beer than of a plate of homemade hickory-flavored potato chips housed in a protective, delicious cocoon of bacon. Taste: Yeah, youíve got some round caramel maltiness in the mix, but the flavor is largely just the bacon character. First and foremost, itís that continual smokey bacon that overrides the far lesser touches of hops and fruit esters and sweet malts. Mouthfeel: Medium-plus body. Lightly carbonated. Overall: Itís interesting, for sure, but be ready and know what youíre getting into here. To protest "itís too bacon" is not acceptable and shall not be tolerated.
