COMMERCIAL DESCRIPTION
Tripels are one of the most beautiful, wonderful beers ever brewed by man. There is just something majestic about them. No simple beer description could capture that. So I had to write a haiku for the description.

Bottle at 5 Seasons North. Seems to have a bit more yellowishness than the standard tripel but it could be the light. A bit hazy. Flavor starts out full and sweet, nice big tripel flavors but the yeast is missing. Instead there is a taste of chardonnay (this must have been aged in chard barrels) that adds an element of tart/sour that i’ve never had in a tripel, also some nice oak flavor... i like it! It does seem a bit wrong to call this one of my favorite tripels when it lacks a key traditional characteristic and adds some abnormal ones, but i’ll do it anyway. Thinner and more dry on the finish, again uncharacteristically. Quite complex overall, which makes me love it more. One of the best and most unique tripels i’ve had.

Appearance: Pours out a lightly hazed, golden body with a thin layer of white foam that dissipated out fairly quickly. Smell: Sweetish nose of pils malt dipped in golden syrup and punctuated by some alcohol and fragrant white peach tones and fainter notes of spice and citrus. Taste: Sweet tastes of pilsner and pale malts boosted further by some candi sugar influences and a perceived taste of wildflower honey. In rolls a warming alcoholic quality and taste of peaches, giving it a taste of fine peach schnapps. Hint of lemony citrus. Spicy flavor reminiscent of dried coriander. No more than a tiny bit of bitterness. Continually drying and warming right up until the semi-dry finish with a last, final dose of spice and fruitiness. Mouthfeel: Medium-full body. Medium carbonation. There’s a definite stickiness to mouthfeel, but thankfully it’s amply carbonated to keep it from ever becoming cloying. Drinkability: A sweet, rich tripel that added a nice, complimentary counterbalance to the beer battered onion rings and its spicy curry dipping sauce.

Golden/orange color. A bit deeper in color than other tripels I’ve seen. The flavor is fruity and heavy on maltiness. The mouthfeel is oily and slick. Very nice.

Tap. Cloudy orange. Aroma of sweet malts. Slight aroma of that white stuff between the orange rind and the meat inside of an orange. Goes down light and refreshing. Lingering bitterness brings balance to the loveliness of the drink. Aging this for a year seems to have added to the character. Flavorful, calming, creamy mouthfeel. Medium Bodied.

Flavor: fruity flavor is still rich but drying out to allow the spicy phenolics to take center stage, picking up a nice blackpeppper edge in the finish

Flavor: sweetness is back in the flavor but the spicyness is as big as ever, a nice malt candy character like a spiced candy drizzled with honey
Overall: age has been very kind to this beer

On tap on 3/3/07: Pours a clouded hazy copper orange with a thin, wispy ring of white head. Sweet, bready, biscuity malty aroma has good authenticity and some peppery spice notes. Body starts with a sweet toasty caramel biscuit flavor, light fruity esters, nice carbonation and a smooth, bittersweet finish with a touch of tartness. A pretty good, and true to style abbey tripel.
