This is a Belgian-style Saison that has been aged for 5 months in a Burgundy barrel. Saisons are a Belgian farmhouse style of beer that uses a unique yeast strain. Originally this yeast most likely came from a winery as it behaves in interesting, unpredictable ways. It produces an amazing amount of flavors. Its complexity is unmatched casting off enigmatic notes of tropical fruit, minerals, earth and various spices.

After the beer’s initial fermentation we filled a used wine barrel from the Cote d’Or region of Burgundy, France the prized wine making region where the most expensive pinot noir and chardonnay grapes are grown. As the beer aged in the barrel the fruit notes from the pinot noir blended beautifully with the beer. The oak flavors provide a structure and backbone to this elegant beer.

Grain: Pilsner, Vienna, malted Wheat and raw Wheat

Hops: Czech Saaz, Zeus, Cascade

OG: 19.5 Plato
