COMMERCIAL DESCRIPTION
Vintage 7.22.09

This is a Belgian-style Saison that has been aged for over 12 months in a Louis Latour pinot noir barrell. Saisons are a Belgian farmhouse style of beer that uses a unique yeast strain. Originally this yeast most likely came from a winery as it behaves in interesting, unpredictable ways. It produces an amazing amount of flavors. Its complexity is unmatched casting off enigmatic notes of tropical fruit, minerals, earth and various spices.

After the beer’s initial fermentation we filled a used French oak wine barrel from Louis Latour that had held a pinot noir for several years with the beer. As the beer aged in the barrel it picked up intense jammy flavors from the wine, big oak from the barrel itself and became something completely new from being in the Cellar for over a year. This beer has a lot of character and is both intense and nuanced in flavor.

Grain: Pilsner, Vienna, malted Wheat and raw Wheat

Hops: Czech Saaz, Zeus, Cascade

OG: 19.5 Plato

on tap. pours a deep red with a slim off white head. lovely aroma with the pinot barrel coming forward with lingering fruit and spice notes. full body with an abundance of alcohol heat. the strongest tasting Saison I’ve had to date. Layers of oak, red wine, spice and dark fruits mingle throughout the mouth. Sweet and hot finish with more barrel notes. Not as carbonated as most in the style. Very enjoyable beer.

Appearance: Served a matte mahogany-hued body with a small-sized, white head.

Smell: Raw oak well moistened with red wine in the aroma, notes of spice and spicy-scented herbs with a hint of berries, maybe red currants. Low touch of cooked honey.

Taste: A leading taste of tart-tasting red wine dosed with a small sprinkling of wild berries. A big burst of tannic, vanilla-hinting oakiness follows. A glaze of sweet honey atop pils, pale malts. Hint of sliced peaches dosed with alcohol. Then a touch of fruit loaf dusted in earthy spices. Quite warming at the end with a taste of mulled wine.

Mouthfeel: Medium-full body. Medium-plus carbonation.

Overall: Good stuff. The original Cinq Saison was a nicely complex brew, but this really takes it up a notch.
