Our cream stout, is an indulgent beer brewed with generous amounts of English chocolate and roasted malts, as well as the traditional addition of lactose. Our stout, however, parted ways with tradition when we added over 20 pounds of Cascabel peppers to the beer. Cascabel peppers, also called Guajillo, are characterized by their earthy character and deep, smooth spiciness. The peppers were de-stemmed by hand and added to the beer post-fermentation to achieve their most potent flavor potential. They add hints of raisins and berries to the beer, as well as a subtle tingling spiciness that washes away with each gulp.

On tap at the Houston Flying Saucer a few weeks back. Deep brown-black with a foamy chocolate-brown head. The beer opens medium sweet and finishes with a tingly pepper spiciness. Itís a little spicy, but definitely not too hot or overwhelming. A fun experiment and another tasty brew from (512).

Black hue with a thin light tan head. Smokey earthy and dry aroma with a bit of burnt poblano pepper in there as well. Smooth and complex flavor of roasty smokiness and a bit of burnt pepper, a touch of sweet chocolate, and earthy smokiness.

Pours black with a milk chocolate head from pint that starts about a half inch and fades. Aroma is chocolate and malt and little hint of bitterness. Taste is a bit sweet with some hops and a slight tint of roastedness that lingers. Some smokiness? Pepper? Body is really thin for a dark beer and little carb.

Pours black without much head. Smell is lightly roasty malts. Taste is roasted malt and a thin to medium body. Maybe a touch of pepper flavor in there but not much at all. The cascabel spiciness really comes through in the aftertaste and leaves a light tingly heat that lingers for quite a bit. Not overpowering, but you definitely canít miss it either. Would have liked a bit darker, roastier flavor and richer body, but the spice level and flavor combination is really nice.

Black pour with a creamy beige head and tons if lacing. Aroma us a strong nutty and roasty blend. Taste is nutty, coffee, and chocolate. Slightly earthy. Smooth palate. Didnít get any pepper spice, but this is a really nice beer.

Aroma: The nose is roasted malt, coffee, and plenty of chocolate
Appearance: This one pours a dark brown color with a decent sized brown head and mild lace
Flavor: The taste is roasted coffee and chocolate upfront with a pretty peppery finish to it
Palate: This beer has a smooth and creamy feel on the mouth, with a long, spicy finish
Overall Impression: This is a pretty interesting one. I didnít realize I was getting a pepper beer, and the nose and the early part of the flavor didnít lead me that way either, but I get plenty of pepper from the finish.

I love a good pepper beer but didnít even realize thatís what this was when I grabbed a growlerful at Premium Draught. Rich, roasty, smoky aroma. Taste is chocolate and more chocolate with the pepper spice kick seemingly muted by the smooth creaminess. Makes me want to try adding peppers to a chocolate milkshake.

Draft at Hi Hat Austin Tx...pours ink black with thin tan head andnlow carbonation. Mild lacing. Stong coffee roast nose with similar taste adding smokiness and small chili taste and heat.

Draught. Inky black pour with small quickly fading head. Nose is strong coffee, heavy roast, earth. Flavor is meat, light smoke, strong dirt, strong coffee, with a light not too dominant burn from the peppers. Not overly spicy like some pepper beer. Aroma of roasted malt, chocolate, with hints of peppers. Pours a beautiful thick black with a mostly diminishing tan head and no lacing. The taste is much like the nose. Roasted malts, chocolate, and a wonderful slow burn of peppers on the back end. Full body with soft carbonation. Smooth bodied. Overall, a delightful beer. I like the way the peppers creep up on you. UPDATED: APR 28, 2013 Draft pour. Pours black with a dark tan head that dissipates. Smells like roasted malt, grain and espresso. Tastes like it smells, though not much cream influence. Aftertaste has a strong peppery feel that creeps up. The pepper made an otherwise average stout unique.
