UPDATED: SEP 11, 2008 A few 6oz sample glasses at the brewpub. In case you were interested the bee’s name is a french-y-fied version of Cellar Pimp, one of the brewer’s (Nick) title. Appearance is hazy dark golden/orange body with a sticky lacing. Aroma and taste is all just "not ready for primetime" brett. Its cider sweet spices, overly floral, and its all just mixed up. In a blind tasting one may just spit this out and say someone fucked up here. However, knowing this is an all brett beer, one could be a little forgiving. The brewer admits its been changing and wont stop, I would love to try this again in 3-4 months. Points for experimenting and trying something different.

Rather small sample size at the server’s insistence. Floral, tangy, sweet and just downright unusual aroma, with musty, funked-out yeast notes, herbal tones and spiciness, notes of flowery perfume, like fresh petals were used, along with some lightly toasted malt sweetness and honey. Hazy orange-amber color with a slight, lasting head. Flavor is equally astounding, with characters in varying degrees of apple and overripe citrus fruit, red grape, chamomile, licorice, dusty, hay-like vegetal grassiness, finishing tangy, peppery and moderately bitter. Light and effervescent, drying and active on the palate, body is light. Very strange beer indeed.

UPDATED: SEP 2, 2008 Pours a pale iced tea brown with a thin white head. An interesting nose: fruity, light hydrogen peroxide, light bretty funk and a subtle note of fermenting fruit. Light-bodied and dry, mildly sour and woody; unlike anything I’ve sampled to date. Floral, fruity and lightly funky with a dry finish. This one is all over the place and makes me think of a "suicide" of various Belgian pales and maybe an unblended lambic. This is the first and only all-brett made in a KC brewpub; that alone earns creativity and balls points. Thanks to Nick and Cris for sharing this with me!
