COMMERCIAL DESCRIPTION
You don’t need a Fat Tuesday to indulge in this Stout! Once upon a time, our Last Rites Imperial Stout poured like it ought to - dark, rich, slow, with strong notes of molasses, caramel & honey. But that wasn’t good enough for the 75th Street Brewers. We found fresh Bulleit Bourbon barrels and topped them off with said stout - leaving them to infuse ‘til February.

UPDATED: MAR 6, 2011 750ml bottle Poured a clear deep ruby color with a medium tan head. Big roast on the malt with notes of coffee and some ash. Mild sweetness and chocolate. The flavor is of choclate and roasted malt. Lively carbonation on the tongue. medium to full bodied with some creaminess

2009 and 2008 vintage enjoyed as part of a barrel aged sampler at the brewpub. ~ 5 oz pour in a taster glass.
2008 version: Its a lot of dry wood. Aroma is woody, alcoholic berries, and a thin roast. Flavor is dry as heck, wood leaf coming through heavy. Thin fruity alcohol, very weird. As it warms it almost turns to a vomit/toilet kind of mix. Hated this the longer it sat. This started out with a higher score but by the end of the glass it was down to this. 7/3/6/3/14
2009 version: Very different where the beer is rich, thick sugary and in your face. The alcohol works well with the sweet sugars. 8/3/8/3/16.

On tap at the brewpub. Pours a black body with a very slow dissipating, extremely creamy, inch thick, chocolate ice cream brown head that leaves a nice lacing. Very pretty. Aroma is rich chocolate and soft roasts with a nice whiskey blended in there too. A light sour cherry comes through as this warms. The whiskey is clearly present, but not overpowering in the aroma. Nicely balanced. The flavor is very rich and sweet with much more roast taste than the aroma led me to believe. A light, sour cherry lactose, a light woody hop bitterness, and lots of chocolate. Not nearly as much whiskey as the aroma, but it does present itself more as this warms. Finishes very dry and rich with lots of roast taste. Lingers for quite a long time with lots of chocolate and roasts with a light cherry. Thinner bodied and smooth. Overall, very tasty. Not as complex as I was hoping for, but lots of bold and sweet tastes with a good balance. Better as it warms.

Flavor: rich chocolate flavor, touch of roasted, sweet bourbon combines with the vanilla and dark caramel to turn this into a creamy chocolate shake, roasted character grows to produce a big bitterness with a touch of burnt coffee, the sweet characters regin control from the heavy roast

Tried this a couple of times on 2 different trips to the brewpub. Served in a snifter. Deep black pour with a tan head. Rich aroma of malt, molasses, alcohol, vanilla, bourbon. Lots going on in the nose. The flavor was warm and filling. Oaky, some edgy hops, chocolate, and lots of bourbon. It finished thinner that I would expect. They are proud of this beer and I believe they should be. A very nice Imperial from a good local place.

UPDATED: AUG 25, 2008 Draft at the brewpub. About an 8 ounce pour in a snifter, served at about 55 degrees - right on 75th! Pour is all black with a 1/4 inch tan head that is quite lasting. Very nice looking. Aroma of some bourbon, roast, bitter hops and a decent nose-full of heat. Taste is hot right out of the gate, big bourbon taste, with a lot of "good and plenty" licorice in the middle to finish. Pretty thin on the palate for an impy. I get some barrel wood in there as well though its overpowered by the heat. Overall, really like the effort from 75th on this one, my highest rated 75th St brew to date.

On tap at the brewpub. Black with a long lasting brown head. Heavy bourbon nose, with vanilla, marshmallow, and oaky notes. Heavy whiskey flavor as well. Still with vanilla and oak and alcohol warmth. The bourbon is really over done. Medium body. Silky mouthfeel. Low carbonation. Dry finish. Not bad, but they need to throttle back on the barrel time.

Gregis (1255) - Shawnee, Kansas, USA - FEB 13, 2008
On tap at the brewpub. Pours jet black with a creamy tan head that reduces to about a 1/4 inch and then hangs around forever, depositing wispy lace on the snifter. The nose is a whole lot o’ bourbon over sweet roasted malt with lighter notes of molasses and plum. Medium-bodied and silky (it’s on nitro) with a hit of bourbon heat at the finish. Roasted malt and cream notes quickly give way tosweet bourbon and plum, finishing lightly dry and roasty. The bourbon lingers well after the swallow, as this one becomes pretty "hot" once it warms. I think it’s a pretty tasty brew, but it’s just way too bourbon-forward for my tastes. The nitro also seems to mute the roasted malt that might otherwise have come forward more and toned the booziness down just a bit. Overall, however, it’s certainly worth a try. After all, how many local brewpubs do a bourbon barrel impy?
