My idea of a strong ale was brewed with loads of malt, hops, jaggery and a touch of manuka smoke.
It was fermented with a clean ale yeast to let the ingredients speak for themselves without getting interrupted by too many esters.
After all that it was aged for 5 months on American oak, then refermented in the bottle.
Cheers – Søren Eriksen – Brewer
Hops - Pacific Jade, Chinook
Malt - Pale Ale, Munich, Special B
Yeast - US-05
Other - Manuka Smoke, Jaggery (raw sugar) and American Oak

The base beer in this is very good just too much barrel at the moment. Needs some good time to rest and mature, in 6 months this will be amazing, just need that harsh barrel to calm down. Surprised 8 wired released this so early

Une bouteille partagée (une chance). Un liquide couleur étang, un filet de mousse. Un nez boisé avec des oranges au caramel. Une bouche solide, forte et puissante. Un liquide fruité et sucré avec des relent d’alcool. Trop

Draught @ CBC 2013. Pours hazy amber with a frothy beige head. Aroma is quite malty with caramel, sugar flowery, citrus, mild cheese, prune and wood. Taste is moderate sweet and light+ bitter. Body is near medium, texture is syrup, carbonation is soft. Finishes hoppy but sweet with alcohol.

Tap @ CBC 2013. The pour’s deep red with a small head. The nose is red berries, wood, some strawberry. Sweet maltiness. The taste is jam-covered brown bread toast. Earthy hoppy bitterness. Caramel. Glazed donut. Full body, quite sweet and syrupy. Overall, OK.

330ml bottle pours an amber brown color with a small off-white head that leaves some decent lacing on the glass. Aroma is dark berries with some chocolate, smoke and alcohol. Taste is a chocolate malty and dark fruity sweetness with a light smoky and roasted grain finish. Not as heavy as I would have expected and mildly carbonated. Quite a decent strong ale, but not quite as complex as I was anticipating.

Big, bold and heavy. 330ml bottle from Archive. Pours dark colour with creamy yellow head, but seemed to diminish quickly. Pretty boozy and malty a bit like drinking liquid Vegemite, but it’s 8Wired so I did like. Much prefer Sorens IPA/2IPAs.

Aroma is thick and boozy with a lot of gooey, sweet malt and smoke, kind of like some kind of dessert made with whisky. Taste is same. A very warming drop, and if I were to drink it again it would be as a fireside whisky substitute.
