My idea of a strong ale was brewed with loads of malt, hops, jaggery and a touch of manuka smoke.
It was fermented with a clean ale yeast to let the ingredients speak for themselves without getting interrupted by too many esters.
After all that it was aged for 5 months on American oak, then refermented in the bottle.
Cheers – Søren Eriksen – Brewer
Hops - Pacific Jade, Chinook
Malt - Pale Ale, Munich, Special B
Yeast - US-05
Other - Manuka Smoke, Jaggery (raw sugar) and American Oak

bottle at mondial 2014, mtl. pours cloudy dark golden with a small off-white cap, some retention and lacing. piney, alcohol-bathed and soaked sweet fruits, sweet bready and honeyed malts, plain sugars - white and brown - cloying. moderate carbonation, medium body - oily and sticky, sweet and assertive grassy-spicy-citrusy-piney finish. meh.

On tap at CBC, pours an opaque ruby red with a small off-white head. Aroma of oak barrels, candied sugar and Belgian yeast. Flavour of loads of stone fruits, oak barrels, alcohol and treacle. Very boozy and caramely. Not the most complex, and quite boozy and fruity. Decent stuff.

[5/4/13] Draught at Copenhagen Beer Celebration 2013. Hazy dark red with a beige head. Aroma of malt, caramel, lots of wood and some alcohol. Sweetish malty flavor with caramel, cookie notes, a bit of wood and a bitter hoppy finish. Medium-bodied.

Aroma is of malt, syrup and a touch of smoke. Appears a brillinat dark amber poor with a sustained soapy white head floating above. Tast is very stong syrup and malt notes. slight honey and smoke. Enjoyed but didnt love this beer. Enjoyed the smoked manuka aspect but not the upfront pale malt syrupy aspect to the beverage.

Bottle. Notes of oak, vanilla, clove, butter and orange. Small notes of smoke. A bit edgeless for a 11abv beer. Surprisingly easy to drink.

330 ML bottle Clear, dark amber. Thin collar of white. Good ABV legs. Nose is lots of malt. Keep thinking root beer. Aniseed, nuts, and mushroom Sweet nose but quite dry. Sweet taste at first, caramel and malt. Then the oak. Lots of oak. Overpowers the base beer. Sweet and slightly slick but changes to a lot of oak flavors, Toasted coconut, vanilla, slightly buttery but quite harsh. Slightly smoky in the finish. Low carbonation. Needs time. Serious time.

Bottle: Served in a Chouffe glass: Small somewhat thicker creamy beige head. Hazy warm red colored body. Aromas of malts, some dust, light fruity, light vinous, some sweets and light soap. Mostly a malty vinous sticky and light dusty aroma. Flavour is malty, bitter, some light fruity tones, some yeast, light wood, light vinous ish tones... Aftertate is malty, bitter, some old wood, some porridge, light dry, bit towards a nasty bitter tone. Low carbo, close to silky mouthfeel, more than medium bodied and a light sticky good bitter texture. Too much (nasty) malts and (nasty) wood tones that dominates the flavour and aftertaste, unfortunately! Damn, this beer gets worse as worse with every sip! Unbalanced with dirty malts, woods and bitters. Ugh...

On tap @ Copenhagen Beer Celebration 2013. This is a cloudy dark plum-red one with a small bubbly light beige top. Not to extreme on the nose really, I get traces of a strong sweetness, lots of sweet malts, caramel, dried fruits, and some berries. Nice not to extreme aroma that’s suggesting a really sweet beer. Let’s try: yeah, it’s sweet, but more nutty bitter than sweet really. It has a really thick and chewy mouthfeel and a soft tear non existing carbonation level. Birches and leafs, it’s a bit earthy as well, and the nutty bitterness is kinda ruining this a bit for me. Fair enough, but not a favorite of mine. 04.05.2013
