Saisons have been around for ages. Traditionally brewed by Belgian and French farmers to provide refreshment during harvest. I’m guessing that flavour wasn’t a main concern back then; the priority was to provide a beverage that was safe to drink, because water usually wasn’t. Never the less, over time they developed a beverage chrarissed by beer geeks of the modern world. The alcohol content was low, so the workers could consume enough to keep hydrated and still perform their job: To load the barn with enough barley for next years brewing season. I bet these hardworking, humble farmers never imagined, that centuries later, their style of brewing would inspire brewers from all over the world. As all our beers, this is a very modern, you might say new world, interpretation of this style. Based on the tradition we have used a French Saison yeast, which provides a plethora of funky, earthy, very "Belgian" flavours. From there we have upped the ante a fair bit by doubling the amount of malt, and thereby the alcohol, and loaded the kettle with punchy Nelson Sauvin hops. Unlike the original, this is not a beer meant to be drunk by the gallon. Moderation is the key for full enjoyment of all great beers.

On the nose it is very similar to white wine, but with just a little more yeast character, the aroma of green fruits and citrus with a light flora finish. Light in body, initial sweetness finishing very dry, i have had this both draft in the roundhouse in HK and in a bottle, the draft seem sweeter, but the yeast character was a lot more present in the bottled beer - overall a great beer quite sessionable considering it is 7%

Bottle. Moderate straw for the malt, light to moderate herbs and dried grass for the hops, barnyard for the yeast, with apple, pear, wood, and vinegar. Head is small, fizzy, white with fair lacing and is mostly diminishing. Color is murky medium amber. Flavor starts slightly sweet and moderately acidic, then finishes slightly sweet, lightly acidic and moderately bitter. Palate is on the fuller side of medium, oily with a carbonation between soft and lively and has a slightly dry finish. Fruity at the start but this Saison finishes with a dry and bitter ending.

Aroma is malty and earthy. Pours a pale golden with a big white foam no real lace. Taste is pretty earthy and funky. Decent!

Tap at the globe, hong kong. Clear deep golden color, small white head. Aroma is malty, citrus, fruity, yeast. Nice cripsy body, hoppy, sour, fruity, little yeasty.

Keg - Fork & Brewer, Wellington. Poured a hazy golden straw with a fine, mostly fading white head. Fresh, tart citrus characters dominate with an estery, yeasty complexity and noticeable sauvin aromatics. A dry pithy lemon bitterness presides in a lingering finish sweetened gently by pale malts and yeast. Medium body and carbonation. Good balance, bright and refreshing with a firm mouthfeel and just a touch of latent heat on the back end. Very good traditional profile with the hop character amped up more than typical.

Bottle pop...gusher. Golden cloudy pour, tons of head...it’s going to be a while before I can drink this. Great aroma, dry dusty grapes, melons, tropical fruit, very nice. Taste, a gush of sweetness up front, very flavourful, lemon, bit of melon, some nice hops with a fairly dry finish. Excellent stuff!

UPDATED: FEB 25, 2014 Gummy chews, vitamins, taffy, canned peaches, grape juice and pear juice, honey and simple syrup... some fusel and plastic and skin sweat off-notes. Highly effervescent, medium body, semi-sweet. Simple fruit cocktail pear / peach flavor. Chalky vitamin resemblance in the finish. A mess of a beer. From bottle. SRM 10.
