330ml brown bottle. Deep brown pour. Head is light brown, creamy and sticks to the surface of the beer. Excellent lace. Coffee, chcoolate and trace alcohol in the aroma. Flavour has chocolate and strong black coffee. Long finish has big roasty notes. Dry and moderately bitter. Medium body, smooth and creamy in the mouth. A pleasing stout.

330ml bottle as “961 Brewmaster’s Select 02 - Imperial Stout” at abv 8% bought at High Wine China’s promotional booth at Spot in Sheung Shui. (Thanks Tomy!)

Looks: Deep soy sauce blackish brown colour with a ring of yeast sediments; Razor thin head with residual soapy beige foam which fades in 10 seconds. Very small sticky lacing with no carbonation.

Aroma: Fragrant and sweet dark malt, with very strong cardamom, perfume, sugar, coffee beans, toffee, light cream, chocolate and faint grass.

Taste: Mid to light sweet strongly-roasted malt, with strong roasted nuts, very strong roasted coffee beans, strong cardamom, light smoke, alcohol, Cola, light molasses notes, dark chocolate, light caramel, light red fruits notes, yeast, lemon, moderate bitter hops and light grass.

Body: Mid to light body; Slick and slightly oily palate.

Mouth Feel: Despite the slick and thick feel, it isn’t all that malty for a RIS or Sweet Stout. Nevertheless it’s strongly roasted as you taste and the roasted nuts and light smoke come out nicely. The cardamom and roasted coffee beans are very expressive and they complement each other well. Sweetness is light, no soy sauce, and booze is very well hidden. The lack of carbo is quite a downer ‘cos it’ll boost its palate a whole lot. Still pretty nice!

Hoppiness: Thin grass in nose, lemon and faint grass in taste. Bitterness is moderate for a lasting, fair bitter-sweet finish.

After Taste: Fairly dry. Very roasty, spicey and coffee bitter to mouth.

Comments: These 961 guys are really putting traditional styles with exotic Middle East twist, with mixed results. This Sweet Stout cum RIS is on the better side, with nice infusion of cardamom and roasted coffee to grace the aroma and taste, but the severe lack of carbo and heads really dampens the enjoyment. If this is fixed, it’ll be up there. Still as interesting as always from 961!

Tap at Jimmy’s. Definite coffee hit in the aroma, and I can swear I smell the cardamom too, though it may just be suggestion. Spunky, spicy, raw flavor, some carbonic acid. Smooth and sessionable. I dig it.

Pours black with a small head. Nose shows fresh coffee, roasted barley and cardamon. A faint cardboard notes shows through. More cardamon as a flavour, the coffee is much less noticeable however. Seems to fall short quickly. Body feels watery.

My favorite of the 961 collection. It pours a rich dark brown color and smells like coffee and coffee, even though there is no chocolate or coffee in it. It smells much better than it tastes but it does taste awesome. An amazing companion to rich tasting foods. Overall, veeery impressive.

330ml bottle pours black in color with a 3 finger light brown head that retains well and leaves some nice thin lacing on the glass. Aroma is roasted malts and coffee with spices and mild herbal hops. Taste is roasted malt and coffee bitterness with enough malty sweetness to balance things out. Medium bodied with enough carbonation to leave a tingle on the palate. This brew was well beyond my expectations and was very enjoyable.

Single bottle purchased from Enoteca Wine & Spirits in Calgary, AB on 05/07/2011. Colour: Black with tanned head. Once again, this 961 product produced enormous head, althought not when pouring, but instead it started to rise about a minute after and then for 10 minutes! Nose: Dirt, charred wood, pipe tobacco, middle east spices, burnt caramel. Taste: Light sweet, medium sour, light bitter. A distinct sour presence here and an overwhelming dose of burnt toast. Bad mouth feel, tonnes of foaming. Pleasing aroma then fail....

Bottle. Black body with a frothy, beige head. Roasted malts aroma. Notes of espresso, chocolate, ash. The flavor is moderately sweet and lightly bitter. It finishes lightly to moderately sweet and lightly to moderately bitter. Medium body, watery texture, lively carbonation. Taste of burnt malts, coffee. Dry finish and a bit tangy.
