COMMERCIAL DESCRIPTION
La Sir Wallace est fidèle au style d’origine. Cette bière très gustative vous surprendra pourtant par sa douceur en bouche, mais attention car elle cache très bien sa haute teneur en alcool. C’est pourquoi elle réjouit rapidement le cœur et l’esprit.

Pours a dark brown with a light brown top. Aroma is caramel, a little smoke and burnt sugar. Taste is toffee, a little smoke, burnt sugar and sweet maltiness. Nice mix.

Bière rougeoyante à la lumière, bien brune en conditions normales, très sucrée au nez (diacétyls ?), mélangeant le toffee, le caramel, la cassonnade, bref du sucre brun très puissant. Moelleuse en bouche, alcool bien contrôlé, saveurs puissantes (on croit même goûter des bananes séchées), mais encore cet excès de sucré qui teinte l’expérience. Elle demeure tout de même agréable, mais on aurait pu atteindre les sommets avec un peu plus de rigueur et de subtilité.

Bière brune, rouge à la lumière, parfaitement limpide, bonne effervescence, surmontée d’un col brunâtre, très mousseux, dense et persistant. Arômes très maltés, malt grillé, biscuit, mélasse, caramel, sucre d’orge, avec aussi un peu de levure, mais également des effluves étonnamment plus frais s’apparentant au miel, à la banane, la pêche et la vanille. Peut-être un peu de muscade aussi. Vraiment un très beau nez, riche et complexe, intense et appétissant. En bouche, c’est pétillant sur la langue, et plutôt onctueux au palais. Au goût, ça semble malheureusement bien moins riche qu’au nez. Malt grillé, biscuit, caramel, alcool (au goût et sensation de chaleur aussi), levure plutôt terreuse, et il reste un petit quelque chose en arrière-plan de fruits frais, miel et vanille. Excellente bière qui apporte une fraicheur inattendue à un style normalement plutôt lourd.

Single bottle from Marché Omni. Pours a dark copper colour with ruby highlights. Big creamy, beige head with good retention and some thick lacing, here and there. Nutty nose at first, but lots of darker fruits come out (dates, prunes) with candy notes of caramel and some weird hop that does seem like it belongs. This does not carry through in the taste, thankfully. A little lighter actually, but better. The grassy finish is better balanced with the caramel malts, roasted malts, raisins and nutty character. Not one I would really have again though.

Bottle: Poured a clear deep amber color ale with a medium size foamy head with good retention and light lacing. Aromas of candy-like notes are quite sublime with some sweet caramelized malt notes also perceptible. Taste is also dominated by fruit and candy-like ester which are quite powerful with some great notes of caramelized sugar with some toffee notes also perceptible. Body is about average for style with good carbonation and no apparent alcohol. I really like the yeast strain that was used for this which generated some nice ester as well as the balanced sweetness level.

Aroma; Caramel, cherry and toffee. Typical aroma but not much developed and having difficulty sticking out. Visual: Black with red glints. Average creamy head, average lasting. Not much lacing either. Taste: Attack is cherry and dried fruits on a caramel basis. More hoppy than an average scotch ale with a bitterness finish, very long lasting and annoying. Texture is creamy and round, body is medium to full. Malty flavors are buried by strong and unpleasant hoppy finish. Caramel and toffee are not developing.

341 ml bottle from Broue Ha Ha, served cool in a tulip glass.

App.: Very deep brown with a nice reddish-tan head. Aroma: Tons of strawberry jam, tons, some brighter berry-like fruitiness, rich toffee behind that, some burnt sugar notes, a touch of smokiness, really thick, sweet and malty. Palate: Medium+ body, full, fairly rounded effervescence, could use a bit more body I think. Flav.: Lots of toffee and burnt sugar, less strawberry/other berry, a touch smoky, still quite sweet and malty; off dry with fair bitterness and a pleasant, deep malty finish.

Pretty good.

Bouteille 341 ml. 8%. Couleur brune foncée, mousse beige mince. Arôme de malt caramel, un peu de toffee. En bouche, malt, un peu de caramel, notes de tourbe fumée vers la fin. Finale avec une légère amertume. Très bonne Scotch Ale...j’ai bien aimé les légères notes de tourbes fumée en finale...différents.

Bottle - 341ml. Dark brown body with low carbonation and a thin off-white foamy head. Robust malty/hoppy aroma with molasses and oaky hints. Its well balanced, strong taste carries caramel, yeasty, oaky, and fruity notes. Ends with a warming bittersweet finish. Well done.

Bouteille 341 ml. Achetée chez Peluso (Montréal). Robe brune avec des reflets rougeâtres. Légère mousse beige qui se dissipe assez rapidement. Arôme de caramel et de chocolat. Goût de caramel, de sucre brun et touches de café et de chocolat. Bon équilibre. Ronde en bouche. Belle surprise venant d’À la Fût!
