COMMERCIAL DESCRIPTION
Blanche des Honnelles (1991) was originally very localised, and has since expanded beyond the boundries of the greater and lesser Honnelle rivers, from which it takes it's name. The Blanche des Honnelles leaves the beaten path somewhat. It has an amber colour which is after all the traditional appearance of the Blanches. It is also stronger (6%) than the Blanches that we know. Its taste is surprising and is not comparable to the brews with the same name that are now on the market. If the bouquet is subdued its first flavour is a stark dry sharpness against a pepper background. There is no acidity in this Blanche that is made with three cereals (barley, wheat, oats). It has a stimulating taste, leaving a subdued but refreshing final impression. Lots of character and curious.

Assez rare pour être signalé, une blanche avec un vrai travail de brassage. D’abord selon le brasseur il s’agit d’une « blanche double », et c’est vrai... Ensuite elle est élaborée avec 3 céréales : orge, froment (logique) et avoine. Voilà une belle conception de la blanche, qui doit être avant tout rafraîchissante, mais pas nécessairement limitée au froment... Enfin, nous avons un niveau alcool respectable pour une blanche de 6% abv, ce qui n’est pas inconciliable, et bien vu également. Couleur blond foncé à ambre clair, là aussi différente. Clarté diaphane, mais sans le grand voile brouillardeux habituel. Bulles très très faibles, bizarre... pour un exemplaire à date limite en mai 14. Mousse beige qui vient à plat et laisse un petit voile maigre !! Odeurs de prune, figue, poire, massepain, miel de tilleul, pain gris. Texture liquide. 1er goût de céréales (il y en a 3, nous le savons) avec de quoi mâcher, et une arrière-bouche fraîche et houblonnée. 2ème goût de céréales toujours, avec une pointe de poivre et muscade. 3ème avec fraîcheur et robustesse du contenu. Arrière-bouche maltée. La longueur est constante. La levure bien faite, un rien salée, poivrée. L’alcool plus que correct pour le genre. La finale laisse une bouche pleine mais est pourtant fraîche. Conclusion : beaucoup plus riche que beaucoup de blanches... A rapprocher de la St Bernard blanche pour la classe... et pour la cote.

Bottle at home. Cloudy light orange colour, offwhite creamy head. Yeasty pepper, spices and light banana and floral tones come through a big bodied creamy, honey-ish malty base. Finish is long and yeasty. Medium carbonation, soft mouthfeel. Not your regular easily drinkable, refreshing white ale bit enjoyably.

Notas de cata: Mucho mas oscura que cualquier otra Wit que haya visto hasta la fecha. Totalmente opaca. Con una gran acumulación de sedimentos en la botella. Giste escaso y de corta duración. En nariz es fuerte, muy intensa. El olor a trigo llega nada mas abrir la botella y al acercarnos la copa se nota un marcado olor cítrico, a naranja madura. Tambien se aprecian restos de alcohol. El cuerpo es muy consistente. La gasificación en la copa es nula. La entrada en boca es mucho más insípida de lo que esperaba, es muy suave, cuando la olía parecía que esta iba a ser una cerveza muy potente y sin embargo la entrada es sorprendentemente suave. Tras la primera impresión la cosa se complica. Aparecen sabores mas complejos, herbales y a especias, sobre todo canela y un punto a pimienta verde. Si seguimos buscando aparecen de forma sutil más sabores que hacen de esta una cerveza muy compleja. El final es ácido pero no excesivo y también se deja notar algo su 6% ABV con un final con un punto etílico pero nada desagradable.

C’est une grande wit! L’arôme a plein du blé et du coriandre avec un peu de poivre et levure belge. En bouche c’est plein du corps (particulièrement pout le style). Il y a du blé, un peu du malt, et un peu d’épices. Bien équilibré avec d’houblon dans la finale, et un peu sec.

Hazy light brown yellow color with tiny head. Aroma is strong yeast, wheat. Flavor is bit yeast and wheat and more malt. Refreshing, but not so much taste.

Aroma of wheat, yeast, fruits, spicy notes. Flavour is moderate sweet with a light bitter finish. Definitely a superior Witbear, more of an aroma than usual for the style.

330ml bottle from Saveur-Biere.com. Pours hazy amber with minimal, receding head. Definitely a little too flat for my liking with smudged wit spice and sweet creamy vanilla. Lacking the usual greatness of Des Rocs.

Sample at En Öl- & Whiskymässa, Gothenburg, 2015, april. Hazy yellow, small white head, dissipating quickly leaving a small lid on the surface. Aroma is gently mild citrus, leaves, corianders, dust, yeast. Taste is creamy and floral fruity, citrus, orange, yeast hints, dry finish. Round, light to medium bosy, medium carbo. A well balanced, tasty and round wit with well hidden alcohol.

Si tratta di una bianca leggermente atipica per la gradazione alcolica elevata (6%), infatti sull’etichetta parla di blanche double, a tripla fermentazione. Prodotta da Abbaye des Rocs, si presenta, differentemente dal tipico colore delle blanche, con un arancio-biondo molto carico, con un cappello di schiuma bianchissima e di breve durata. L’aroma è principalmente di malto, mentre il sapore molto pieno e appena tendente al dolce, e mette in risalto anche spezie e lievito. Media frizzantezza. Interessante.

A gift bottle from a Belgian friend from his cellar. Best before has passed in 2007, so this rating is maybe not comparable to the fresh ones. Quite heavy yeast growth in the bottom of the bottle, but with a carefull pour it came out clear amber though with no head whatsoever. I had to leave around an inch to the bottle to ensure that not too much yeasts poured out. Aroma is mild, biscuit, dead leaves. Taste is also quite mild and has pepper and mild carbonation. Surprisingly well preserved specimen that maybe has lost some of its aroma during the years.
