Abbaye des Rocs (9% alcohol vol.) is a pure malt beer, with no added sugar. The entire range of tastes is directly linked to the double fermentation, the precise quantities of malts (7 types) as well as the mixtures of three kinds of hops (Belgian, German and Czech). Its colour is a striking deep and majestic red. Its taste is rich and full of subtlety. It is tasted like a red wine with which it shares the ruby colour without having the tannin. It develops a strong sweet smell. It confirms the initial impression in the first mouthful, with a sharp body that is balanced with a certain fruitiness. It frees itself on the palate and develops an impressive depth of taste. Some traces of burnt wood are detectable, but never scorched even if it contains this kind of malt. The foretaste is very prolonged because of its rich and unctuous development throughout the mouth. The bitter and sugar tendencies (even though there is no sugar in its composition) compete and come back together to the taster's great satisfaction. It is a deep, mystic and extremely mature beer to be classed among the great products of our soil.

Bottle at Rose Red Cafe, Brugge, 17/10/14. Hazed chestnut brown with a decent off white covering. Nose is caramel, spice, dark malt base, toffee, earthy notes. Taste comprises some bitter roasted notes, spice, toffee, dark fruit rinds, dates, prunes. Medium + bodied, fine carbonation, lightly warming alcohol in the close. Solid Belgian strong, good balance, but not quite seeing where the 4+ average score comes from!

Cloudy tea-brown with lots of big flakes of sediment floating around. Half inch of consistent, fine tan head that fades moderate-to-slowly and leaves a film on the surface and substantial attractive ring around the outside. Aroma is white raisin, apple, figs, cherry, bit of grape, light bread and crust. Body is medium-light, on the watery side, very smooth moderate carbonation, fine creamy texture on the palate, no burn. Flavor is bread crust, hint of cinnamon stick and nutmeg, dried cherry, light brown sugar, moderate dates. Just enough heat on the exhale to keep things interesting. Fruitiness is understated in the flavor, in a good way. Hops are minimal (maybe hay or dried grass) and the very little bitterness is infused in the bread-crust flavor. I had pretty high expectations, but they’ve been surpassed. Great beer! Reminds me of Rochefort 8.

UPDATED: DEC 15, 2014 330ml bottle served in a Chimay chalice. A: Pours a nice dark amber to brown color. Quite dirty with chunks and yeasts floating around. That’s most probably the dirtiest beer I’ve ever had! Forms a medium head when poured. Good retention and many lacings formed and left S: Brown bread and Belgium yeasts. Toffee and caramel. Fruity and spicy too. Notes of black pepper and vanilla T: Complex. Balanced sweet-bitterness. Mix of Belgium yeasts, roasted malts, brown bread, dark fuits, brown sugar. An authentic Belgian Ale M: Quite smooth. Unbelievable that this is a 9% ABV. Medium-high carbonation. Very bready aftertaste O: Very drinkable. Very easidrinking despite of the high ABV. Absolutely great beer. No mistake here [ BA Review @ 1/28/2010 ]

"a sweet, woody, slightly spicy ull bodied belgian ale. better flavored and cleaner than either the tripel or grand cru. maybe still a touch overrated, but quite good. fig, malt, dark fruit, spice, candi sugar? lots going on here, quite smooth...still not quite a favorite."

750 ml bottle. Amber red colors big rocky beige head. Sweet caramel malt nose has notes of port and dark dried fruits. First sip yields a soft rich brown sugar maltiness that leans toward plums. Mid taste is sticky and sweet and complex with hints of vanilla and wood. Finishes with a spicy herbal hoppiness. This is a nice rich Belgian brown ale that is full of depth and complex character.
