COMMERCIAL DESCRIPTION
History of the Beer Style
Last year Abita Brewing sponsored a homebrew contest where the winning beer would be brewed as a Select offering. The beer was brewed by Kerry Yoes of Baton Rouge, LA and we have taken that recipe and made this Select beer.

Abita’s Select: Imperial Louisiana Oyster Stout
Abita Imperial Oyster Stout is made with pale, caramel, roasted and chocolate malts. Oats are also added to give the beer a fuller and sweeter taste. The roasted malts give the beer its dark color as well as its intense flavor and aroma. The flavors of toffee and chocolate are prevalent but not overpowering. The beer is hopped with Willamette hops. Since the beer gets so much flavor from the malts there is not a lot of hop flavor. There is just enough bitterness to complement the sweetness of the malt. Finally, freshly shucked Louisiana oysters are added to the boil. The salt from the oysters gives the beer a more intense aroma and mouthfeel.

Food Pairings
Imperial Louisiana Oyster Stout is very good with grilled steaks and most red meats. However stouts are best served with sweet desserts, especially ones with chocolate in the recipe. It is also excellent as a stand-alone, after-dinner drink.

On tap at the Square Pub. Pours near black with tan head. Aromas of chocolate, caramel, and roasted malts. Flavors of nicely roasted malts and is rounded out with some chocolate, caramel, and light hop bitterness. Little bit of salt in finish but did not pick up any type of oyster flavor. Not a bad stout and by far the best I have had from Abita.

not usually looking for these types of beers but i liked my half glass. very roasty. not a dark beer fan but this was enjoyable.

On tap at Chimes East in Baton Rouge, as well as Whole Foods on Park Lane in Dallas. Pours a dark brown color with a tan head. The aroma has some nice chocolate and roasted malt notes. The flavor is very similar. I get a lot of chocolate and roasted malt, as well as some light smoke and a slight brininess. Medium mouthfeel and medium carbonation. Nice.

Nitro draught. Pours a near black with a thick pillowy nitro head. Nose is slight, but there is just a tad bit of roasting. Feels very smooth and creamy with a mellow roasted taste.

Very dark with a small mocha head and plenty of lacing. Mild aroma of roast, grass, and chocolate. Taste is roasty, a touch sweet, and a touch bitter. Medium-full bodied and creamy. No oyster... Bummer. Oh well, this is a really good abita, though its not that good of a stout.

Tap @ Nobi .. deep brown .. mild foam .. simple stout, hardly imperial but still a nice beer, the abv is very well done but the palate is a bit weak .. .. ..
The other children they were very nasty to me about that.
They said bad, hurtful things to me.
They called me Tasty-Cakes and they would beat me and stick pine cones in my ass.

Those were very bad times.
