COMMERCIAL DESCRIPTION
This dark brown Serafijn has a spicey herbal character and a soft bitterness. The Achilles brewery has a unique way of achieving an even heating of the wort: using no direct flame or steam, the wort is pumped through a spiral that sits in a tub of hot water!

Commençons par dire que la classification de la bière sur le site est erronée. Cette bière n’est pas une « belgian strong ale » mais une double, en fermentation haute et refermentation en bouteille. Point. Elle doit être dégustée en tant que telle. Si elle fait 8 % abv, ce n’en est que mieux, et on le verra lors de la critique, mais ceci n’en fait aucunement une strong... Couleur brun roux très jolie. Clarté nette. Bulles moyennes partout et assez vives. Mousse beige épaisse mais à gros flocons... Arômes jolis de pain complet, feuilles mortes, prunes bleues jeunes, avec une légère touche d’anis étoilé. 1ère bouche à la texture souple, mais à la saveur assez carrée, sur le malt café avec un houblon assez rigide. Arrière-bouche plus agréable et fondue. 2ème belle bouche plus nuancée, avec du malt torréfié, du houblon en fleur et des fruits noirs. 3ème de plus en plus agréable, ce qui est un gage de qualité. Arrière-bouche fondue et bel équilibre entre force et saveur. La longueur s’ouvre sur de superbes accents, entre le malt, la levure et un ensemble de houblons assez complexes qui harmonisent vraiment l’ensemble. On ne peut qu’admirer une telle entrée dans la longueur. On poursuit tranquillement sa route ensuite en découvrant d’autres nuances...., que le nez développe aussi par quelques touches d’épices dures. La levure est structurée et tout à fait adaptée à une double. L’alcool est bien dosé, aide clairement dès la 3ème bouche. Très très bien. La finale développe encore le sujet, en vient à traiter des questions philosophiques ayant trait à la saveur. Nous sommes dans le très haut de gamme surtout pour une double. Conclusion : cette double est une très grande bière, qui témoigne d’un grand savoir, et qui encourage vraiment à découvrir les microbrasseries. Cette bière fait preuve d’un grand caractère et elle va très nettement a mas, ce qui est pour moi un vrai gage de valeur. Nous avons devant nous un bel avenir dans la bière. This is another very nice brew from this brewery. It pours with a very large foamy head and an orange hue of brown colored body, where the very bottom center of the glass has a beautiful glow from the light. Otherwise, you cannot see through it at all and the head never really fades, just leaves a thick lacing across the whole surface. The head just has these little bubbles that are constantly popping, little by little, so fun to look at. Aroma starts with a fruity, esters filled brown sugar smell. There is a light bit of smoke underneath that, which I just love. Hints of sweet raisin and just a faint touch of dry herb. Taste starts with strong fruity esters and finishes with a dry herbalness and a very light bitterness from the herbal flavor. This dry bitter herb sits around for a bit and its hugged by fruity sweetness. It has a soft mouthfeel and very, very easy to keep drinking. The body is just medium, the carbonation is not strong, just goes down, as if it weren’t even there. I do not know what it is but this brewer hits the sweet spot with me.

Bottle 2005 at home. Wow!!!!! This is awesome, didn’t expect that at all! Pours a hazy mahogany colour with a tan head. Lovely aroma of caramel, raisins, lots of nuts, a little bit of yeast and a acidic hint, hits the nose. Flavour is smooth with loads of nuts, caramel, ripe dark fruits and a little yeast, balanced with a nice bitter note and a touch of alcohol. A bit thin bodied tough.

Bottled. Dark red colour, small beige head. Strong plummy aroma. Strong plum and caramellish malts in flavour. Licorace also noteable in finish.

Pours a dark brown with a big long lasting head. Sweet with soem breadiness. Aromas of dark fruits, prunes & plums and alcohol. Port like slightly vinous. Sweet dry finish. Medium to full bodied. Very nice beer and not as bitter as the Serafijn Blond.

Cloudy brown color. Raspberries, apples, oranges, flowery nose. Smooth, creamy mouth of chocolate raspberry juice. Sweet velvty finish. WOW this beer was really rounded. Very drinkable. Another great random find.

A very fruity smel and a good and rather complrx taste makes this a very nice beer. Rolling the beer over your tongue makes this a very nice sensation.

Brown / dark orange colour, high strong head. Caramel and specy aroma with nice spice. Smooth chocolate note following a deep malty but not too sweet finish. Nice overall taste.

Toffee dark brown pour with a brownish almost reddish cream head. Light-bodied for 8% abv. No sediment. Nutty, sweet ale. I really liked this one.
