This is a richer version of our Dancin’ Monks Dubbel, conditioned on oak cubes used by Spirit of Texas Distilleries to age their Pecan Street Rum. While no additional alcohol is derived from the conditioning process, the oak adds a rich complexity to the ale. Pair with dark chocolate desserts or bold cheeses.

Interesting description, but strong metallic notes mixed with the dubbel qualities competing with it and making it hard to enjoy the raisiny/rum notes that might otherwise shine through.

Bottle bought by a colleague who recently visited Houston. (thanks Wolff) Dark amber with a small head. Nothing special with this one. Dryish with dried fruit, some nuts and caramel. Warming alcohol in the finish.

C&C bottle from HV WF. Pours a light bronze color with a quickly dissolving head but active carbonation. Typical quad aroma with some sweeter dark fruits, prunes and malts. Flavor is a little disjointed; resembles a quad but a little too boozey and spicy. Okay.

From the corked caged 650 ml bottle which was bottled on 8/13/2014. Dark amber-red pour with modest tan head. Sweet Belgian malts and black licorice nose. Slight boozy quality. Medium body. The taste has the same malt and licorice flavors with a biting bitterness at the finish. Not bad now but might have been better after cellaring.

Bottle. Dark brown color, small beige head, decent lacing. Aroma of raisins, plums, vanilla. Taste is vanilla and Christmas fruitcake. Decent.

Cloudy reddish brown color, moderate to large head, good lacing and retention. Aroma is raisin, plum, light banana, dark sugar, yeast, light alcohol. Medium to full body, raisin/plum flavor dominates with some alcohol burn. The oak/rum flavors are barely there. Really good.

This should be "Monks". 750 c&c from Total Wine in Sacramento, CA. Pours dark ruddy copper with a 3 finger foamy beige head. Aroma of dark roasty malt with dark fruit. Full bodied. Flavor is some rum spice, with indications of chocolate, and raisins or similar. I’d prefer plum/prune, but this works. Finishes just less than dry. No problem with alcohol (except in the brain). Good quad.

Bottle from Capitol Beer & Tap Room. Pours near black with a huge tan head and a strange fruity aroma .There is a sweet fruity caramel malt flavor with some banana ester and a dry finish.

Smell is raisin and dark fruits and yeast. Taste is raisin sweet malt. Cloying for me but seems good for the style, if I had to hazard a non quad expert guess.

Bottled on 12/10/2013 Appearance: Medium khaki colored head which fades away rather quickly, minimal head retention most likely due to its high alcohol content. Dark chocolate brown color body. Nose: Amazing! Chocolate, maple, sugary, caramel, toasted malt and nutty notes come through strong and weave in and out as well as come forth at different points during the pint. Palate: I was initially hit with a complex and distinguished array of flavors that burst forth. As you take a drink, the ABV lets you know it’s there, not by taste but by a delightful warming sensation that is welcomed as you sift through the flavors. I noted: Fruits, apricots, plums, roasted coffee and chicory. It has a huge full bodied mouthfeel and a slight bitter finish that turns into a rich sugary-sweetness that lingers for some time. Overall: I’m writing this on a cold, blustery night and I had opened this bottled after a long day of being outside in the cold. Once I popped the cork from this bottle I couldn’t be happier with my selection for the evening. This beer definitely needs to be tried and is easily the best quadruple I have ever had the good fortune to drink. -BeerandWhiskeyHQ.com
