The group created a recipe for a 4.5% abv oaked ruby ale. They also wanted to add some subtle spice notes to add extra interest and seasonal flavours to complement the warm flavours of the oak. A selection of malts – Pale Ale, Chocolate, Cara and Crystal Rye – created a malty base with fresh yet rich flavours. They deployed an exciting blend of hops – Fuggles, First Gold, Summer and Galaxy and also added some interesting and distinctive spices to the hop vessels – toasted oak chips and cassia bark. Cask in London, UK. Pours deep amber with white head. Malty, caramel, fruity, bit spicy. Good bitter.

Cask in The Golden Lion. Ruby brown and purplish beer with a thin off white foam head. Nose is ale fruity, nutty, spicy, little caramel and boot polish. Taste is ruby ale malty, caramel, slight clove or cinnamon or mulled wine effect, slight milk chocolate. Not sure condition was great.

Cask conditioned at The Chequers, Oxford. Amber to brown with white head. This felt like quite a simple bitter style beer to me, smoothish malty notes with a hint of strawberry on the palate. There is a touch of sweetness, simple leafy hop notes. Quite pleasant.

Cask conditioned handpump White Horse London 02/12/13. An amber rather than ruby coloured beer with a whitish head and a little lace. House yeast aplenty with oaky notes. A malty beer over the hops. Good body and lingering flavours. Decent enough and more importantly likeable.

Cask @ Barton Arms, Worsley. Darker copper in colour with a creamy head. Has a medium to high bitterness with some pleasant malts in aroma and taste.

Cask. Really attractive ruby pour with a decent lasting creamy head. Very fruity aroma, somewhat woody. Spice, fruit, malts in the taste. Heavy, satisfying ale-like finish. Excellent winter bitter.

Cask at The Haymarket. Pours clear copper, decent white head. Good spicy and vanilla aromas, some herbal notes. Taste is malty and sweet and Christmas-sy. Rich for the strength. Good stuff.

On cask at the Haymarket. Appearance - a very dark honey colour with a nice head. Nose - lovely enticing grass and pine. Possibly going into rosemary or lavender. Taste - lovely malt and hops bitterness coming through at the same time. Some lemon and grassy notes with a dry cereal finish. Palate - medium bodied with a creamy texture and a dry refreshing finish. Overall - good beer from a great regional brewer.
