Sampled at the 2013 Chicago Cider Summit. Pours a clear pale gold with a white head that starts and remains at the edges. Aroma has a nice dry apple note with a touch of tartness and a bit of sweetness. Flavor is dry as well with mainly tart apples.

Tap at Town Hall. Very clear and pale yellow pour with zero head. Very nice tart apple nose and taste. I’m a fan - this is good.

A pretty good cider. Not very interesting to look at, but has pleasant apple flavour and aroma. Taste like real apples, not "candy". Okay.

Bottle at home with my wife. Pour is a crystal clear golden color with champagne like bubbles clinging to my flute glass. White wine, dry yeast, champagne, light pear, apple sauce, and a touch of cinnamon. Taste is semi-sweet, crisp straw, baked apples, biscuit, and tannin with a crisp dry finish. Light body with high carbonation. The sweetness in this cider cuts through the acidity nicely, balanced with dry champagne notes. Not bad.

UPDATED: OCT 24, 2012 Poured from a bomber. Nice golden color with good bubbles. Very sweet and smooth in taste. One of the more fun ciders I?ve drank.

Sampled at ÆppelTreow Winery. The cider was brighter in the flavor and aroma than most of the other ciders. Crisp apple pie and yellow apple skins. Unfortunately, not as smooth or blended.

The aroma was just a bit funkier than the Hogan’s Draught cider (UK) that I tried along side this. Fruity notes, but also a little head-scratching acidity. Less fizzy, too. Drinkable; I’m curious about this producer now. (on tap at Town Hall, Minneapolis)

4oz pour at Churchkey is a crystal clear gold with zero head and medium carbonation. Nose is sweet apples, honey, pears, flowers. Flavor is sweet, apple juice, honey, apple skins, Granny Smith tartness. Medium bodied, slick finish. A refreshing tartness on the palate.

Tap at Churchkey. Quite a nice cider with light, crisp, and extremely true to style cider flavor; both the fruit and skin come through beautifully. Not complex, but yummy, and at least supporting a cool winery for those people who won’t drink the more intense beers.
