This culinary delight is a rich farmhouse-style saison brewed with a generous helping of aromatic Turkish bay leaves and a dose of coarsely ground Tellicherry black peppercorns. The wild fermentation is finished off with cultured brettanomyces, which lend a noticeable sour note. As a collaboration between celebrated Louisville chef, Josh Lehman, and the brewers at Against the Grain, this beer highlights the interplay of cooking and brewing in a single glass. Complex, yet refreshing, this beer has a wild, perfumey aroma that prepares the palate for the tangy, yeasty flavor that mingles with spiciness from the spices as well as the phenols produced in fermentation.

Hazy golden colour, white head. Aroma of bay leave, brett, lots of bay leaves. Sweet malty flavour, bay leaves, brett, chili pepper. Finish brett, light lingering chili.

Bottle @ weekly tasting shared by Joes. Hazy golden color, medium sized white head that lasts for a decent while. Aroma is yeasty, lightly spicy, a hint of citrus. Taste yeast, wheat, citrus slightly, spices, only the slightest hint of pepper. Decent body and carbonation. Quite nice.

Poured a cloudy and hazy orange/yellow with enormous fluffy white head. Aromas a sweetness and funk, spices, pepper, and some fruits. Taste was medium to heavy sweetness and a medium sour aspect to it. Had a medium body and kind of a thick texture to it and was overyl carbed. Interesting spin on this Saison tho with the peppercorns and they were noticed. I found this pretty unique and not a bad beer.

Bottle from Voldby.unclear golden with a small off-white head. Aroma is sweet, malty, oranges, lemon, yeasty, light spicy and light barnyard. Flavor is quite sweet and moderate bitter. Dry and moderate bitter finish. 220315

Clear, carbonated, golden colored pour. Small white head. Little bit of lacing. Lemony bay leaf aroma. Some notes of malt and yeast. Spicy note right up front in the mouth. Lemon and bay. Tart but sweet. Not bad.

Bottle, 6.8%. Hazy amber/orange with samll off-white head. Aroma is malt, yeast, spices, brett, little mango, hop, little wheat and a little lemon. Flavour is malt, fruit, brett, spices, yeast, little dry, little lemon, medium sweet, hop, pepper, little grapefruit and medium bitter.

A very faint scent of Brett meets one from this wild and Brettanomyces fermented brew. More grass than hay in the flavour and a slight sweetness from the malt. The finest tangy flavor is mixed with Brett characteristics and some pepper seasoning. There is also added bay leaves in the brew but I am not quite sure I catch the flavor of the seasoning. Not much bitterness to talk about. The finish is marked by the light acidity which is of citrus character and not vinegar or even worse! At the very end I sensed some metallic bitterness.
