COMMERCIAL DESCRIPTION
This culinary delight is a rich farmhouse-style saison brewed with a generous helping of aromatic Turkish bay leaves and a dose of coarsely ground Tellicherry black peppercorns. The wild fermentation is finished off with cultured brettanomyces, which lend a noticeable sour note. As a collaboration between celebrated Louisville chef, Josh Lehman, and the brewers at Against the Grain, this beer highlights the interplay of cooking and brewing in a single glass. Complex, yet refreshing, this beer has a wild, perfumey aroma that prepares the palate for the tangy, yeasty flavor that mingles with spiciness from the spices as well as the phenols produced in fermentation.

draft at local option chicago. Pours deep golden with a small white head. Aroma is very tea and spice forward, herbal and fruity with some citric zest and pepper. Flavor has much the same, lots of cooking spice, and herbal again, pepper with a brett finish. Medium body and a crisp carbonation.

Bottle, 6.8%. Hazy amber/orange with samll off-white head. Aroma is malt, yeast, spices, brett, little mango, hop, little wheat and a little lemon. Flavour is malt, fruit, brett, spices, yeast, little dry, little lemon, medium sweet, hop, pepper, little grapefruit and medium bitter.

A very faint scent of Brett meets one from this wild and Brettanomyces fermented brew. More grass than hay in the flavour and a slight sweetness from the malt. The finest tangy flavor is mixed with Brett characteristics and some pepper seasoning. There is also added bay leaves in the brew but I am not quite sure I catch the flavor of the seasoning. Not much bitterness to talk about. The finish is marked by the light acidity which is of citrus character and not vinegar or even worse! At the very end I sensed some metallic bitterness.

Bottle shared with MF666. Hazy yellow/orange with a small white head. Pepper and citrus, lots of coriander. Overall the spices dominate and the mouthfeel is a bit watery. Light/medium body, light sweet and acidic. Not much to see here, overdone novelty brew. Refreshing, though.

Bottle. Pours hazy golden with an off-white head. Aroma of brett, funks, bay leafs, fruitiness and malt. Flavor is sweet and fruity with some caramel, funk, fruitiness and yeast. Medium body, average carbonation.

Pours hazy golden with a white head. Aroma has notes of malt, yeast, mango, pineapple, brett, black pepper and hint of bay leaves. Taste is medium sweet and light bitter with a long brett, funky, black pepper, mango and pineapple finish. Body is medium, texture is thin to oily, carbonation is soft.

Bottle, 75cl. Damn wax. An unclear, orange colored beer with a dense, off-white head. The aroma has lots of bay leaves, with some generic spiced notes and a nice fruityness. Some funky hints too, lemon and barnyard. It’s medium dry and ligtly tart, with flavors of oranges, resins and some spiced, herbal notes. Lasting bretty, spiced and orange finish. Easy drinkable, tasteful and moreish. 141231

Bottle sample at a tasting at the Beer & Beyond shop. Thanks Ariel. Cloudy yellow. Pleasant funky aroma with citrus, pepper and some bay leaves. Flavor is dry, funky, slightly sourish, with fruitiness and mild peppery spiciness. Medium-bodied. Nice.

This one makes you burp, very carbony. Orange and clear with white head. 22oz pour at home. Complex aroma. Pepper and lemon cake. Taste is like a lemon sprite with alchohol. Just too bubbly otherwise taste is good
