This culinary delight is a rich farmhouse-style saison brewed with a generous helping of aromatic Turkish bay leaves and a dose of coarsely ground Tellicherry black peppercorns. The wild fermentation is finished off with cultured brettanomyces, which lend a noticeable sour note. As a collaboration between celebrated Louisville chef, Josh Lehman, and the brewers at Against the Grain, this beer highlights the interplay of cooking and brewing in a single glass. Complex, yet refreshing, this beer has a wild, perfumey aroma that prepares the palate for the tangy, yeasty flavor that mingles with spiciness from the spices as well as the phenols produced in fermentation.

On tap at Beer Temple. Slightly hazy golden orange colour, white head. Aroma of strong spice, like cardamon (probably the bay leaves), light Brett funk, lime. Flavour is medium sweet, light peppery, strong spice, again very cardamon-like and a little like eucalyptus, light lime, light tart, spicy and light peppery finish. Light-bodied. A bit too spicy imo.

Bottle sample at a tasting at the Beer & Beyond shop. Thanks Ariel. Cloudy yellow. Pleasant funky aroma with citrus, pepper and some bay leaves. Flavor is dry, funky, slightly sourish, with fruitiness and mild peppery spiciness. Medium-bodied. Nice.

This one makes you burp, very carbony. Orange and clear with white head. 22oz pour at home. Complex aroma. Pepper and lemon cake. Taste is like a lemon sprite with alchohol. Just too bubbly otherwise taste is good

22 oz bottle shared at Natifest. Pours a hazy golden color with a thin white head. The aroma and flavor have quite a bit of black pepper, herbal notes, bay leaves, pale malts, mild citrus zest, softer at the finish. This is far from my favorite ATG beer, but worth trying.

Bottle at a bottle share. Pours a hazy orange color. Nose is very herbal, with some bay leaf in there, slight pepper, and a nice amount of funk on it. Taste is slightly sour and very herbal, with a little funk to it. Not bad at all.

Bottle at home. Pours lightly hazy orange with a medium sized, creamy and tight bubbled white head, medium retention with spare lacing. Aroma is lemon zest, medium earthy hops, earthy and funky Brettanomyces, basil and black pepper notes with light cracker malt. Flavor is tart and funky Brettanomyces, light malt, medium earthy hops and bitterness, lemon zest, basil and black pepper with light fruity esters and a dry finish. Light body and moderate carbonation.
