This culinary delight is a rich farmhouse-style saison brewed with a generous helping of aromatic Turkish bay leaves and a dose of coarsely ground Tellicherry black peppercorns. The wild fermentation is finished off with cultured brettanomyces, which lend a noticeable sour note. As a collaboration between celebrated Louisville chef, Josh Lehman, and the brewers at Against the Grain, this beer highlights the interplay of cooking and brewing in a single glass. Complex, yet refreshing, this beer has a wild, perfumey aroma that prepares the palate for the tangy, yeasty flavor that mingles with spiciness from the spices as well as the phenols produced in fermentation.

Draft @ CB. Golden color with a small white head. Aroma is lots of bay leaf and peppercorn, zesty citrus and very light barnyard. Flavor is very spicy with more of a saison taste and no real sour or tartness. Medium to light body with active carbonation. This one is very spicy with lots of bay, not really my thing but interesting.

750ml bottle... Thanks to an ATG brewer for kindly giving this to me. Shared with robotopera and friends. Interestingly, some yeast chunks float up to the top of the bottle upon opening. I got the first pour, including the couple chunks. Hazy orange color. Minimal ring of white head. Just a few dots of lace. Big orange citrus and spice in the nose. Medium-plus body. Smooth, kind of crisp, light carbonation. Lightly slick texture. Kind of a bright, refreshing flavor. Moderate spicy taste, kind of peppery, light herbal factor that I imagine is the bay. Light peppery heat on the back end. Kind of zesty, light to moderate sweet, light to moderate bitter. Nice light tart taste, light citrus works well with the rest of the beer. Nice interesting brett beer to share and try. Pretty solid.

Small sample at Spuyten Duyvil from a bottle: Pours murky gold with a white head. Aroma is spicy, definitely getting hints of the pepper, but not so much of the bay leaves, some perfume, and some farmhouse funk. Body is pretty light, but it has a nice bite from the pepper and/or hops. Contrary to what the bottle of the beer would have you believe, this was a rather subtle beer that didn’t try to hit you over the head with anything.

Sampled at mwbbf. C lear gold. This is a really thin feel. Somehow i get dandylions. Wild funk and Bret are light. I just don’t get a lot of flavor here.

Waxed 750 from Whole Foods. Pours hazy straw with fizzy carbonation and fast-dissipating white head. Nose is hopcitrus, funky yeasty Brett, lemon, florals. Tastes of tart fruit, hopcitrus, spare funky and yeasty flavor, and a complex and superb finish. This one is delicious.

750 ml bottle to snifter (shared with the Mrs.). Looks good; a hazy apricot with foamy white head. Smells and tastes yeasty, citrusy, and bretty with a soft, well-balanced bay leaf presence. Pleasant on the palate. Good beer.

Bottle in a glass. Pours amber with an off-white head. Aroma of light Brett funkiness, some citrusy and light fruits, pale and caramel malts, light pepper and spices, and light hops. Flavor the same with a nice blend of everything. Average texture. A solid beer.

15 cl. draft @ Delirium Hoppy Loft. Clear pale golden with a white head. Tastes of lavender and bay leaves, spices, hay, yeast, soap, light citrus and grapes, herbal with some Monster energy touches. Light bodied. Not as bad as the previous sounds but definitely odd and honestly I have no idea where they were going with this. Not really getting brett nor pepper (maybe some white pepper if I really try). Odd one out but interesting.

Taster at Delirium Brussels. Shared with Mathieu87. APPEARANCE: clear blond beer, small white unstable head. NOSE: lytchee, anise, florar, pineapple. TASTE: gingerbread, pepper, some sourness, anise is gone almost completely, herbs, clove, sweet.

On tap at Beer Temple. Slightly hazy golden orange colour, white head. Aroma of strong spice, like cardamon (probably the bay leaves), light Brett funk, lime. Flavour is medium sweet, light peppery, strong spice, again very cardamon-like and a little like eucalyptus, light lime, light tart, spicy and light peppery finish. Light-bodied. A bit too spicy imo.
