COMMERCIAL DESCRIPTION
A solid dose of light pilsner malt along with a variety of similarly undermodified German-style malts gave us a crisp, clean base to work with. Then we got it All Funked Up. Generous additions of Apollo and Vanguard hops created a substantial flavor of citrus peel and floral spice as well as plenty of IBUs for such a mild malt bill. Ale yeast was then used for primary fermentation before adding a blend of three strains of Brettanomyces. These superattenuating little bugs were allowed to thoroughly ferment out many complex sugars and leave behind their characteristic (and very apparent) wild and funky flavors. After about four and a half months, we added a fresh addition of whole leaf Amarillo hops that spent about a week imparting a citrusy, almost candylike flavor. Finally, we moved the beer to a bottle for a final fermentation that cleaned and carbonated this beer to be ready for the glass.

Bottle, shared with Parksy and TylerDurden at the lake, my 7600th rating. I’ve cellared this for 18 months, hoping the brett has had time to work it’s magic. Very hazy light gold with a lively white head that drapes the glass with lace. Aroma is funky and slightly sour. Lovely bretty funk with bright fruity undertones, lemon and apricot, austere biscuit malts. Massively drinkable!

22oz bottle. Been holding on to this close to a year. I was concerned about the hop and brett mix, which I generally find aversive. Opened this up at a tasting after we did a blind tasting of Bretted Saisons. I can say that this beer would have done fine as a saison and I get no hop-centric character to this beer. Thick oily golden color, cannot see through it. Aroma is lightly oily and herbal-earthy brett, strong. Flavor has a lemon zing with some tartness. A little residual sweetness of the malts. Less herbal-earthy and a bit more goat oily. A bit of a dry bitter aftertaste. This might be the best price to quality ratio I have had from this brewer.

Bottled. Pours clear golden with an average, white head. Aroma of citrus, floral notes, barnyard and funk. Slightly sweet flavor that ends up dry, tart and bitter. Medium bodied, oilt to watery textute and soft carbonation. A very nice and hoppy Sour.

Sample at first sunday. Metallic and aggressive funky sourness to the overall drink. Dirty, earthy, and grassy. Little bit of grass and hay hop profile.

Unknown size bottle, probably around 65 cl. Expensive one @Ale&Hop in Barcelona. Pours light hazy golden with a beautiful creamy white head. Smells of lemon with some bretta aroma. Taste is lemony, with funky and damp notes, the hops adds some fruitiness making for an unusual blend of flavors. Light final medicine note. Almost no bitterness, probably too old for the hops to survive.

Nice creamy mediumlasting head. Aroma is slightly dry boozy, citrus peel, oak, thinner, brett, bark, citrus, paint. Taste is slightly harsh citrusy, brett, citrus peel, oak, thinner, alcohol, citrus, bark, old cat piss. Medium to longlasting bitterness, slightly dry harsh mouthfeel. Not my cup of tea...
