The second installment of the chef collaboration series. We were happy to partner with Chef Levon Wallace from Proof on Main. Chef Wallace brought his culinary expertise and homebrewing experience to the table and came up with a incredibly refreshing and unusual brew. Pilsner malt, spelt and torrified wheat make up the grain bill, balanced with the fruity and resinous New Zealand hop Pacific Gem. Then we added galangal, a tropical herbaceous plant rhizome imparting a spicy, floral and earthy flavor and aroma. Then kaffir lime leaves were steeped to provide a perfumed citrusy aroma. Both galangal and kaffer limes leaves are used in traditional Asian cuisine. And if that wasn’t weird enough, post fermentation we added the juice of several yellow midget watermelons straight off the Proof farm. The resulting beer is fresh, flavorful and interesting.

On tap @ Diving Dog. Pale straw colored beer with white foam. Smells of melon, ginger, and woody citrus pith. There’s a lemon and lime note here, which is kind of nice. Light in body, crisp on the tongue, and some spice. As it sits and I take a few more sips, I get an almost medicinal herb quality that I don’t like. Maybe a bit sweet, too. A miss.

Draught at The Porter. Pours lightly hazy brown with a medium, frothy off-white head, long retention with good lacing. Aroma is medium bready malt, juniper berries, light caramel malt, figs and medium earthy, herbal hops. Flavor is moderate bitter earthy and herbal hops, lightly spicy, bready malt,figs and a dry finish. Medium body and carbonation.

Draft. Clear gold in color, poured with a small white head. Spiced aroma and flavor. Lasting aftertaste.

Draft to taster at Ei8ht Ball from notes. Pours a clear light gold color with a small white head. The aroma has watermelon, lime citrus, herbal character, pale malts, lemongrass, and some spicy notes. The flavor shows much of the same though not as much watermelon. Light bodied, soft carbonation , this one might just be a bit too manufactured for me, too many different things going on in a lighter beer, worth the try though as I can appreciate doing something different.

On tap at Beer Camp - Chicago. Pour is straw yellow with a medium white head that fades quickly. Aroma and flavor of watermelon, green pepper, lemongrass, rosemary, and spice. Finish is vegetables and spice.

The Sampler, Brooklyn tap: Pours golden with a white head. Aroma is lime, Basil, ginger (or galangal... I can’t really tell). Taste is pretty much all of those flavors overlaying a light kolsch body. Weird, but, in some weird sense, not that bad.

Not good. Off putting taste and no aroma. I still love against the grain but this missed the mark.

Even once in a while even the best brewers slip up. If this is your first experience with Against the Grain don’t be fooled by this mediocre fruit beer. Skewing too far on the weirdness scale it winds up mired in a mess of conflicting flavors.

Aroma / Appearance - The golden bronze body starts off gently enough. The problem starts with the nose - minty and medicinal it is not appealing at all. Sharp and crisp it is not inviting even when you know what you are sampling.

Flavor / Palate - Starfruit and citrus burst on the tip of the tongue. Overwhelming the other flavors they finally fade into lemons, grass clippings, and medicinal textures. Rather than "fresh, flavorful, and interesting" the outcome is a stark example of an experiment gone wrong. Hopefully the rest of the Chef Collaboration series worked out better.

Draft - watermelon candy with floral notes. Very playful. I like it when beers make me laugh. Very easy to drink.
