COMMERCIAL DESCRIPTION
Our first barrel aged beer here at Against the Grain is the Kentucky Ryed Chiquen. Named so because: 1. It was made in Kentucky. 2. It has a lot of Rye in it and was aged in rye barrels. and 3. It is not Chicken, and as we all know (or should know) Chiquen refers to anything that is not chicken. Brewed with Maris Otter, rye malt and caramel rye, imparting a spicy, fruity and dry flavor. Then hopped with enough English Nugget and Kent Goldings just to balance and fermented with our house ale yeast. After fermentation we moved the entire batch into the AtG private dining room and into used Redemption Rye barrels from our good friends at Strong’s Spirits. There it aged for 5 weeks until we felt it had picked up the right amount of residual bourbon character and oak flavors. We then transferred it to our serving tank, carbonated it and the end result is on tap now, a balanced drinkable and complex barrel aged beer.

Draft at Mikkeller - sweet aroma. Nice Amber reddish color. Amber really allows the bourbon flavored to shine through. Deceiving ply deniable for a 9% beer. Clean palate.

Light orange zest and rye whiskey aromas, some oak and more whiskey as it warms. Taste is whiskey, peach, orange zest, rye crackers, caramel and marmalade. Coconut barrel character really shines in the finish when it has warmed.

Bottle. It poured a clear amber color with an off-white head. The aroma was of dark sugars, bourbon and some fruits. The taste was similar to the aroma with more bourbon, fruits and malts. Decent.

Tap at Clubhouse BFD. Pours deep maker, white head. Aroma is sweet berry, bourbon, caramel, vanilla. Interesting. Flavor is malt, caramel, light bourbon barrel character. It’s ok.

Reddish brown pour, big frothy light brown head. Spicy rye aroma, hints of baked bread. Flavor is mostly rye, hints of wood and toffee. Interesting, but a one time bye.

Tap @ basement beer bar. Aroma of fruity caramel, bourbon, spicy. Clear dark amber with white head, not lasting. Moderate sweetness, light+ bitterness, spicy. Medium body, watery+ texture, avg. carb., sweet bourbon finish.

Sample at the Daily Growler 3rd Anniversary on 12/17/15. Pours clear amber with a medium beige head. Nose of sweet malt, light caramel, spicy rye malt and whiskey. Malty and caramelly flavor with spicy rye accents before a mildly boozy finish.

Bottle thanks to Matt! Bit of a slow gusher on opening. Pours murky hazel, medium beige head, nice residual and lacing. Aroma is spicy rye, hints of whiskey. Flavor is light plus sweet, light bitter, rye malts and rye whiskey leave a pretty prominent mark on the flavor profile. Medium body, high carbonation.

750 ml bottle poured a clear orange amber with a small lasting amber head. Aromas of rye, oak, vanilla, rye ehiskey and fruitiness. Palate was light to medium bodied and smooth with a dry finish. Flavors of rye, oak, fruitiness, light vanilla and light whiskey with a smooth dry lingeting rye finish.
