COMMERCIAL DESCRIPTION
The Genmai Akashi-tai 2002 was created using the finest of rices for sake — Yamada Nishiki — in an almost entirely unpolished form. Because unpolished brown rice was used, this sake required extra special attention to detail, such as double-steaming of the rice. Although brewed in 2002 and bottled after being allowed to age, the Genmai Akashi-tai 2002 will continue to grow in delicious complexity if allowed to age further. Newly fermented sake cannot provide this kind of mature complexity of flavors. The 2002 vintage brings out all the nuances of fragrance and flavor inherent in rice. [ Bottle #1858 ]. Clear light to medium amber colour with virtually no head. Aroma is moderate to light heavy rice, caramel, raisin - plum - prune, wood, light alcohol. Flavour is moderate to heavy sweet with a long duration, alcohol, rice, prunes, wood. Body is medium, texture is oily, carbonation is flat, finish feel is light to light moderate alcoholic. Bottle at home ... copper ... sweet rice floral ... little raw alcohol nose ... caramel ... rice ... little toffee ... burnt brown rice ... again little raw alcohol ... interesting but not one of the better ones ive had ... this has really grown on me ... quite good depth to it.
