A double IPA version of the regular IPA called Holy Cow.

In short: Simple but effective sugary IIPA. Alchemist does much better (I)IPAs.
How: Tap at brewpub december 2007
The look: Clear golden body with a small white head
In long: Rather sweet beer with a body that could have used a little more caramelised thickness. Instead the sweetness felt as sugary as caramelised. That ultra-clean sugary body didn’t provide a place for the alcohol to hide. Sharp but short bitterness with orange peels and pine-tree flavour. By the end of my glass the sugary and alcohol presence was starting to bother me. This is a well-brewed but simple beer. One of weakest (I)IPA from Alchemist. Compared to their El Jefe that I had the same night this one felt as intense and complex as a Christmas carol.

Rating from 11/23/07 - Draft at the brewpub - Poured a slightly hazy orange-amber in color with a medium white head that stuck around. Aroma was big with citrus and pine hops. Flavor followed pretty much the same yummy profile. Some malty sweetness to provide the minimal amount of balance required to make this an excellent beer. John has hit another home run with this one...

My Bottom Line:
Honeyed biscuits ride the large bubbling, successfully reaching the potent citrusy hoppiness. A balanced mammoth this Double IPA is, but it still lacks the panache of their wondrous Heady Topper, imho.

Further Personal Perceptions:
-A veil of foam skirts the hazy orangey blond.
-The hops offer a piney character as well, but mostly remain in the citrusy realm of things.
-Hop bitterness is prominent, but never exaggerates.
-The honeyed cereals are fun, but the alcohol warming that comes with it is not necessary methinks.
-Don’t get me wrong, this is another solid beer from The Alchemist. I guess I’ve come to expect grandeur out of every one of their creations.
