Draft at brewpub: This was kept in stainless for 3 years and served from the cask. Ruby color, light pink head and fruity aroma. This beer has aged extremely well! The Bretts are present, but not overwhelming., the sweet/cherry has mellowed nicely. This beer was awesome at this age.

This is my first sample from this brewer and it was quite an ambitious sample. Orange/yellow with a thin but stubborn head. Great lacing. Smells breaddy with some dust, cherries, cognac, grass. Taste is sour but in a good way with some decent juniper and coriander notes alongside what can best be described as stale butterscotch. Champagne like palate and finish. Very bold for a brewpub.

Only 7 barrels-I would have done a growler. Peach colour with active little white head, lace in glass. Yeasty aroma. Smooth lambiclike, well balanced, long finish. Creaminess from wheat, fruit tartness from cherries.

UPDATED: NOV 22, 2005 Glass at the brewpub. Hazy, opaque and chunky orange-pink with a smallish lasting head...sour wheat, cherry, vanilla and licorice in the strongly earthy nose....faint fruity cherry-sour flavor at first, becomes much more pronounced midpalate, joined with wild thyme, a touch of blueberry perhaps and just a hint of dark chocolate...medium body, fairly yeasty, average carbonation, quite dry and sour to finish.

Appearance : Clear pink with a medium pink-ish foamy head. Huge lacing.
Aroma : Lots of brett with light tannins and sour notes. Light sour cherries.
Taste : Lots of brett with sour cherries. A bit metallic. Finish has notes of sour cherries with a lot of brett.
Overall : Very weird beer. The wild/sour profile was a bit different than what I’m used too. It seems like the brett was very intense so maybe I’m not used to such brett bombs. Anyways, it was quite tasty. Took a few sip to get used to it but I ended up liking this quite a lot. Appearance is really gorgeous. Cherries are very tasty. Nice sourness, nice brett albeit a bit too intense for me. Very interesting beer.

On tap at the brewpub. Pours a dark red with a thick white head. Aroma of sour cherry and wheat malt. Flavor is super cherry with sour notes and some wheaty grainy malt. Nice fruit notes, not too sour, the fruit and malt blend very well together. A very good sour.

En fût. Verre de dégustation dégusté directement à la brasserie. Arôme: Odeur de cerises avec une pointe de cannelle. Apparence: La couleur est rouge légèrement voilée. Présence d’un mince col mousseux et d’une fine dentelle sur le verre. Saveur: Goût de cerises légèrement sûrettes mais sucrées avec une pointe de vanille. Durée moyenne de l’arrière goût. Palette: Le corps est moyen avec une texture légèrement vineuse. Faible effervescence en bouche. Légère présence de cerises en arrière goût. (Rating #2959)

Sweet fruitiness of cherries and orange zest sitting surrounded by decorative lacing. Not enough signs of the interior wilderness, either there isn’t enough brett, or it hasn’t had time to develop yet.
Hushed wilderness touches the cherries, peaches, and curaçao(?). Wheat malt tartness matches that of the yeast’s, but it still doesn’t reach the intensity levels I would have desired. Low carbonation imparts a classy feel, but all in all it is much sweeter than what I would have expected in a bretty ale. This still remains a beautiful creation, don’t get me wrong.
Encouragement will nurse future leaps.

Pours a cloudy orange color with a ring of white lace. Aroma of sour cherries with mild brettanomyces. Flavor of sour cherries and mild brettanomyces. The body is light with a dusty mouthfeel and soft carbonation.
