I thought the Jim added a sweet and full flavor to this Tripel, while the oak smoothed it out. There were also distinct flavors of pear and apple. Great palate, great taste, very filling... Aroma is lots of wheat malt, some oak, and a little bit of bourbon. Flavor is quite tart from the wheat malt with a bit of sunscreen type flavors and some vanilla from the oak aging. Pours a semi-hazy golden pale brew with a nice off-white head that leaves behind some spotty lacing and a thick white ring. Aroma of bourbon, sweet pears, citrus zest, a touch of coriander and vanilla. Taste is almost full bodied with flavors of golden grain malt, candi sugar, yeast funk, pears, a hint of cloves, coriander and, of course, bourbon. Finish has a nice vanilla and bourbon aftertaste with some alcohol warmth.
