11.5 oz on tap at Chef Paul’s. 3-6-09- dinner after a very tough day...Moderate yellow in color, head is just a thin layer on top. The faint aroma is primarily of alcohol. Heavy grapefruit flavor right away- citrus and booze very present in the middle that fades to a very malty sweetness- too sweet for a tripel? Interesting finish- picked up just faint whiskey/bourbon smoke and bitterness right at the very end. Lots of layers and complexity here. Swings a bit wildly across the spectrum for my taste. Nice beer overall though.

Nice beer, pours a golden color. No head. Bourbon and wood aroma. Fruit notes and bourbon taste, would have again.

Bottle - aged one year. Looks light and has the hazy straw color that tripels have. The nose is fruit, oak and burbon....not a big shock. The flavor is sweet and fruity up front with lots of vanilla and a woody hint of whiskey in the finish. Great beer. I need to try some fresh to see if the balance and smoothness was from the age or if its just this damn good on its own.

Bottle shared by mentor, thanks Paul. Poured a clear golden-yellow color with hints of orange and a thin off-white head that faded to a ring. Aroma of fresh rye bread, some light bourbon, a soft vanilla paired with some faint spiciness, and some undertones of soft fruit (orange and tangerine). Smooth, sweet entry with some soft, light fruitiness (orange and light lemon) paired with soft hints of vanilla that led into a light bourbon with some spicy undertones coupled with some dry oak on the finish. Soft carbonation and light on the palate. A very delicate beer that seems to balance the base beer and the barrel well.

Pours an orange/ amber with no head. Aroma of spice, bourbon, and wood. Flavor of spice, bourbon, fruit, and candi sugar. Really nice!

Bottle. Pours light metallic gold, with a few bubbles racing to a thick, white head. Wafts of bourbon and cinnamon are present, but not overwhelming. Honey, cinnamon, and a touch of Jim Beam embrace the mouth, and finish smooth and dry, leaving a bit more bourbon and sugar. It’s like someone poured just the right amount of Jim Beam into some La Fin du Monde and made it smoother. And the 11% sneaks up on you if you’re not careful, a la Duvel. Definitely recommended.

UPDATED: MAR 6, 2009 On tap at Uber. Pours golden amber with a thick white head. Nose is slightly sour oak, candi sugar, and spicy yeast. Nice balance in the taste between the whiskey and the sugary malt and spicy bread. I was surprised that the tripel was all still there. Full mouthfeel and sweet malty finish.
