A wonderful light bodied tripel with just a hint of vanilla and bourbon. When chilled the initial sip is clean and refreshing as a tripel should be. On the finish you get that slight touch of vanilla. As the beer warms the vanilla and bourbon play a bigger role but never get out of balance with a malt profile. Hops are constrained just to enough fairly neutral bittering hops (perhaps Saaz) to balance the malt.
The head was a beautiful soft white cloud that stayed with the beer till the last sip.
Allagash clearly has it’s yeast under control unlike many other American breweries that let their Belgian beers go banana/bubblegum/clove. Additionally they did an amazing job of adding the bourbon barrel character as a layer. Other craft brewers end up with beers that taste like a poorly made Jack and Coke.
Overall an excellent beer that I’ll be returning to for Thanksgiving dinner. Maria (6167), Thisted, Denmark

Carbonation is very soft. lots of subtle fruit aromas and flavours. Also quite a bit of spice in the flavour, the oak really comes through, the aging really added another dimension to the beer, but i’m not sure i’m a big fan of this new dimension
