Bottle: Golden color with some floaties and a small white head. Aroma has some yeast and fruitiness, the oak and bourbon didn’t come through untill it had warmed to near room temperature. Flavor was a little tart, there was some oak but other than a dry finish I didn’t pick up on much of a barrel character, it was sedated in comparison to other beers that really over do it.

Bottle from Sept 2004 (9.5%), tasted June 2008: This one opened with a fairly loud "POP". It pours a hazy almost amber tinged golden color. There was a large off-white head on it that settled quickly into a thin one. The nose is nice, with many notes. I get hints of the bourbon, yeast, vanilla and citrus. They don’t overpower one another. WOW! what a taste. This is incredibly smooth & silky, with a lot subtly going on. Subtle hints of the bourbon, as well as spices, clove, banana, yeast. What a fine treatment of their already great tripel.

Lovely, simply lovely. Hazy peach coloring, with small creamy white head. Light alcoholic nose, with some hint of light fruits, and just a tad bit of barrel age coming through on my last whiff before sipping. I like how the spices from the yeast intermingle with the tannic qualities of the barrel aging. Still remains very well balanced and soft on the palate. I felt very good after finishing this bottle.

Orange-golden color with a creamy white head. Aroma is full of whiskey and oak with some prominent vanilla notes and a touch of sugar. Charred oak flavors followed by hints of maple some peppercorn spice and a subtle hop presence. Warming alcohol is apparent in the finish.

Bottled March 2008. Hazy, orange-golden with a medium sized lasting head and nice frosty lacing. Light fruit aroma: apricot, apples, grapes and some vanilla. Flavor is peach, spicy vanilla, clove, wheat, and honey; all bittered by some peppery oak and a delicate whiskey finish. Soft, medium body is smooth and dry.

November 2007 bottle. Hazy golden amber color, nice thick and creamy head. Aroma of caramel, with some fruit and malt notes too. Lots of carbonation, somewhat crisp mouthfeel. Taste less complex than expected--perhaps needed more time to age? Flavor strongly caramel, also malt with mild spice and hints of citrus. Drinkable, but not one I’d go out of my way to try again.
