Dec. 04 vers Poured deep cloudy orangey amber with a nice tan head...smell was oaky and sweet with a hint of vanilla...taste was hot...hot with bourbon, oak, smoke, vanilla, alcohol...just tastsed way too hot...I’ve got a bottle of the July 9.5 and I must wonder if it is smoother...this needs a LOT of time...

pours a semi-hazy orange with a small off-white head, lively carbonation, okay lacing.
smell of fruit, bread, grain, touch of toasted caramel, nuts, malt, some spice.
taste is smooth, sweet, pear, apricot, green grape, grain, carbonation, some wood, slight spice.
overall a little too sweet for my liking.

Appearance is a hazy yellow with medium white head. Aroma is rather sweet. Taste is somewhat sweet, but really hits you with that bourbon undertone and alcohol. Overall not great, but not bad.

Pours a dirty gold and very hazy with a small, resilient white head with strong lacing. Nose is strong and malty with generous bready and sweet fruit aromas, along with some alcohol. Bourbon barrel aging is immediately evident in the flavor, and it’s too much of a whiskey taste (there is nothing subtle about it). The tripel qualities of fruit and wheat are overwhelmed by the wood. Backside is a little nutty and boozy. I love good beer and I love bourbon, but this is not a good combination. Perhaps the 8 weeks of aging should be cut to two to keep the whiskey to a flirting hint in the taste and not a punch in the face.

Draught @ Gramercy Tavern. Pours hale golden yellow with a medium, white head. Aroma is sour, apple skin, some cherry and red berries, touch of vanilla. Taste is much of the same though sweeter. Sour and sweet with apple skin again, some slight maltiness, tones of cherry and berry. Much too sweet for the style and for the monkfish I had with it.

3-2-08 bottle (2 years aged) shared at tasting
Cloudy yellow that looks slightly orange with no real head. Smells just like pine sol and I can’t seem to get past that smell. The flavor is lemony, woodsy, and actually somewhat pine sol like. Alcohol is quite present in the flavor. Thick mouthfeel but it just makes this beer seem heavy and difficult to swallow. Not a huge fan of the style and a little too "woodsy" for me.

On cask. It is fruity and bourbonny, not the best mix for the Tripel but passable.

Sample courtesy of Silphium. Pours medium gold with big white head, fades to film. Huge alcohol burn up front, lots of bourbon. Whew! Flavor the same just a huge alcohol and bourbon kick. This burns. Not much going on besides that.

yellowish/golden color, head is white. actually has an aroma reminiscent of a pale lager with notes of wet paper sack. there are milder notes of spice and banana, but the aroma is underwhelming. flavor has spice, little banana, barely perceptible bourbon in the finish. I can’t believe I spent $15 on this 750.

Corked and caged 750 ml bottled October 2004, pours cloudy golden yellow with a nice lasting head of large bubbles, good lacing in my glass. Sweet fruity and bourbon aromas, smoky and woody flavors, the bourbon taste almost overwhelming at first but mellows throughout, medium bodied with a fairly smooth mouthfeel, not as carbonated as most tripels, finishes dry. At 13.99 a bottle no thank you.
