I wasn’t sure how well this was going to age - I hadn’t realized this was bottle conditioned until I just looked it up now. Pours a murky brown with a bit of head. The aroma is malty with a bit of spice. The flavour follows exactly the same way, but with the spice more prevalent than was on the nose. Tastes in a similar vein to some winter seasonal beers that I’ve been having recently. Enjoyable stuff.

Subtly toasty caramel nose with some faint grass, dark fruit and cedar. Flavor is as equally subtle as the aroma with hints of caramel, almond, vanilla, dates, and cocoa. Medium body with a soft carbonation and a tad watery finish. Plenty of balanced malt, not too sweet, real smooth. Aroma has some belgian funk, and definitely some candi sugar, but it is also apparent that this is not your traditional Dubbel. Very delicious with lots of chocolate and bubbliness. Finishes surprisingly dry, especially for the style. Not at all unenjoyable. Different, not what I was expecting, but awesome. I want to find another bottle of this to lay down and see how much better it is in a few years.
