Pours a reddish/copper with a thinner than usual (for a quad) head. Not quite as pillowy as a St Bernardus, but the head that does remain lasts throughout. Aroma is yeasty, fruity, and slightly peppery with hints of cherries, raisins, and figs. Taste is dark, and fruity with hints of phenols and figs. There is also a fairly noticable peppery/warming alcohol finish. Overall, not the best quad ever, but pretty good.

C&C 750. Pours into my Chimay glass a murky golden brown with almost no head. Nice, sweet, fruity nose, raisin, fig, brown sugar/light molasses, mildly boozy. Sweet, dried fruit flavors, raisin, fig, date, prune, some light brown sugar, sweet malt, an almost sherrylike tinge. Body is just slightly on the thin side for my taste - does not really match the rich flavors. Mild alcohol warming in the throat. It’s been awhie since I’ve had a nice quad, and Allagash does not disappoint.

Pours a Dark murky copper color with a big tan head. Aromas of apples, berries, and other dark fruits. Tastes of the same fruits. Very well balanced. Drank right after the Allagash Brewery tour. Great brewery!!!!!

Bottle. Aroma of yeast, malt, fruit, and alcohol. Probably in the top three for belgian style beers I have tasted. Tastes similar to the aroma, but an enjoyable sweetness to balance the alcohol. Very enjoyable.

UPDATED: OCT 17, 2009 At the 2007 Big Beer, Belgians, & Barleywines Festival in Vail. Yummy! Pours a cloudy dark copper amber with an off white head. Orange coriander meaty aroma. Fruity sweetness to the flavor needs a bit more malt body to be a champion. I like the emerging spiciness to the finish. UPDATE: On tap at Downtown Johnny Brown’s. Pours dark amber to light brown with a mid-thick off white head. Cotton candy aroma. At warming, the huge fruitiness emerges. Plums and raisins galore!

Pours a auburnish-copper; medium white head. Aroma is of yeast, malt, apples; sweet. Alcohol hint in the aroma. Flavor is very good and complex. Body is light, and despite alcohol is pretty easy to drink. Taste is of caramel, yeast, some fig/dark fruit; Alcohol and sweet finish. Light throat warming. Overall sweet flavor, and the alcohol is hidden. This was really good and exceeded my expectations.

750ml bottle: This one pours a hazy, coppery co;or. There was a small off-white head that doesn’t last too long. The aroma is quite nice: a myriad of different scents. Bready, caramel, coriander, pears, apples, and possibly a few others. The taste is quite good, although it a tad lighter in body than I would have expected. Light carbonation on the tongue. Tastes of caramel (but not very sweet at all), spices, fruits. It is complex to say the least. Very nicely done.

This is one of the best beers I’ve had to date. Picked up a bottle from Bev Mo La Mesa. Pours a nice brown color with a small off white head that bailed quikly. Taste of bread, toffee, chocolate, with some spices as well. Cant wait to get another bottle!!

Blind Quad Tasting 07. 750 ml bottle from xnoxhatex. Light brown in color with a small diminishing off white head. Light bready aroma, grainy, earth and very yeasty (that beefy trappistes yeast at that), toffee, coriander, and alcohol. Medium bodied with soft carbonation. Lightly sweet, sugary, red fruits, a little acidic, and alcohol hidden well but for bit of warmth on the throat. A bit of chalky finish but not bad overall. Finished 4th (or 5th?) out of 9 Abt/Quads.

Bottle. Copper with a small white head receding into a small ring. Lots of cherries in the aroma followed by caramel and bitter chocolate. The flavour is very nice - soft, quaffable body. Sweet fruits, chocolate, and toffee notes are prevalent. Alcohol and sweet raisins nearing the finish. Very good.
