Commercial Description:
The base of the beer includes English two-row malt and pale crystal malts, establishing an understated sweetness. To give Hugh Malone its hop character we use generous portions of Simcoe hops at three points in the brewing process. To begin with, we use a technique referred to as first wort hopping, in which Simcoe is added to the sweet wort as it enters the kettle. When the wort comes to a boil in the kettle we add Warrior hops, adding another layer to the bitterness of the beer. Later in the brewing process we steep a large amount of Simcoe in the whirlpool to impart a distinct hop aroma. Finally, during secondary fermentation in our conditioning tanks, we dry hop the beer, which instills a hoppy aroma with notes of pine and grapefruit. This 8.5 % ABV ale has a malty palate and a pronounced bitterness. It has a pleasant dry, hoppy finish. Original Gravity: 1080 by volume. Recommended Serving Temp: 45 degrees to 50 degrees F. Recommended Cellaring Temp: 55 degrees F

(750 ml bottle) hazy orange gold with small white head. Some lace. Aroma is floral/citrus hops and yeast. Flavor is floral and citrus hops, some sweetish malt, and a hint of yeast in the finish.

750ml - Poured a darkish reddish amber in color with a fairly big whitish head that settled to a creamy foam over the beer. Some nice lacing on the glass. Aroma is an interesting combination of Belgian yeast and plenty of citrus and herbal hops... really nice. Flavor is much more about the bready yeast than the hops. Hops make themselves known at the end... both in a nice hoppy flavor and some finishing bitterness. Unusual hoppiness for a Belgian, but a welcome (and *very* interesting) change from the usual Belgian Strong Ale. I really like this one...

Bottle. Pours with a large white head, excellent lacing, with a cloudy and dark yellow body. Hints of pears, bananas, hops, lime, and tons of citrus. Texture is slick and carbonation is lively with a bitter aftertaste. Decent beer but too much citrus and bitter taste for my liking.

Hazy golden-amber with a fairly thick head. The aroma is rich with Belgian yeast - musty, footy, with fresh bread, herbal hops and dried fruit. Starts sweet, with almost candied herbs. From there a more bitter note emerges. Even to the finish it remains fairly sticky. While this does not entirely fit, it’s not too disjointed - I still like it but those hop flavours and especially aromas have my craving something drier.

Hazy melon color with fine, rich lattice work. Happy hoppy aroma with some light pineapple, orange peel, fir, lemon zest and Orval harmonics. I never want this nose to end. Low carbonation. Soft mouthfeel but sticky finish. Flavors are incongruous with aromas: are sweeter and maltier than the hoppy intro led me to believe. Complex, intriguing flavor profile. Starts pretty sweet and jammy with notes of nectarine, plum pudding, and caramel. Then it suddenly rises to a dry, rindy perch before settling back into a comfortable sweet cushion. Not disappointing by any means but would have really loved more lingering hops, a less sticky finish, and a dryer overall experience. Still, a good brew.

Pours amber with thick tan head. Aomra of yeast, spice, and mild hops. Taste is as expected from a Belgian IPA, light hoppiness mixed with bready yeast flavor. Medium body and dry finish. Not a big fan of this one.

Tap Capital Ale House Downtown 08/28/2008. Malty grainy nose. Slightly cloudy orange amber with small white head. Grainy pale malt flavor with some spicy hop notes and a touch of candy sugar. Belgian yeast spiciness. Grassy floral hops are assertive. Well carbonated medium body with somewhat dry fruity finish with a good deal of residual hop bitterness.

Pours amber, with a tan head. Aroma is spices, caramel, malt, and banana. Flavor is spices, hops, malt, sugar, and bananas. Nice, but I generally expect more form Allagash.
