Dec 24, 2007 Bottle, at various locations during the Zythos weekend, March 2006. Hazy gold, thin white head and moderate condition. Gentle soft woody earthy lambic notes and sweet malt in the nose, soft and low lambic funkiness in the mouth with a hefty perfumed tripel note, Sweet finish with some mustiness creeping in at the end.

Dec 19, 2007 Bottled (2007 vintage). Hazy amber, lively head. Light woody, vinous, yeasty nose. Medium sweret with sparkling, vital mouthfeel. Fruity with underlying caramelly malt. Vinous with evident yeast character, some red berries. Complex and elegant like a good champagne.

Dec 2, 2007 Tap at Blind Tiger. Pale orange, cloudy appearance. Thick white head. Very light spicy aroma, lots of wheaty aroma and a yeasty sweetness. Cardamom and lots of fruity character. A bit of citrus, lemon and light coriander and lemongrass. Low bitterness, but with a Belgian feel with a hint of oak and vanilla in the finish.

Dec 1, 2007 Draft at the Blind Tiger. Dark orange pour. Aroma is mainly oaky and malty, with some spices. The flavor is composed of significantly strong malt, caramel, sweet dark fruit, oak, and with a slightly tart finish like red wine. Good, but not exactly what I expected.

Nov 29, 2007 25.4 oz bottle, 2005. Clear brassy brown with a whitish fringe and persistent haze. Nose is sour then yeasty honey, dried cherry, apricot and spices. Lovely. Smooth with a tang, lightly sparkling. Taste is an unusual beer-wine hybrid. Funky peach and lemon peel with subdued toffee. Oaky drying.

Nov 28, 2007 Tap at Blind Tiger: Hazy copper pour with an off white head. Musty yeast aroma. Some earthy/farmhouse hints as well, with leathery subtleties. The flavor has a mild brett presence, notable lemon undertone (not citrusy lemon, more rind character) Has a mildly candyish malt back and a slightly oakey finish. Well made, but not as complex as I had hoped for. The brett hasn’t kicked up yet.

Nov 21, 2007 2006, 10/13/07: Light amber w/ a lasting white, medium sized stand of fine and tight bubbles. Bretty & floral aroma w/ a hint of lime leaf Bready malt, wood oak, hints of red wine. Spicy yeast (peppery) and more floral. Well balanced flavor, lightly woody flavor, earthy, very mildly tart; Bready malt... Crisp flavor, dry finish w/ a woody and herbal aftertaste. Fruity from the wine barrel and yeast. Lighter medium body, medium carbonation, warming alcohol. Not bad... A bit more aging might help smooth out the rough edges. Would probably go well with some salmon or other light fish.

Nov 17, 2007 2007 bottle. Cloudy, orangey amber with a frothy head. Vinous aroma with hints of oak. Sour fruit. Rich oaky vanilla flavours blending with sour fruit. Dry acidity throughout with a woody touch towards the finish. Full/bodied, moderate fizziness. A fantastic beer, proudly showing its Belgian roots, reminding me of the best from De Dolle Brouwers.
