COMMERCIAL DESCRIPTION Cask; Special - December 2011. A dark and rich porter that bursts with roasted malt flavours. Hopped with traditional English East Kent Goldings plus American Galena but then aged on the wood of the Palo Santo tree from Paraguay. Palo Santo means "holy tree" and it’s wood is used in South American wine-making communities. We were lucky enough to get our hands on a small quantity of this super-dense timber and added it to the conditioning tank and after fermentation allowed the beer to ’condition’ for six weeks.
