COMMERCIAL DESCRIPTION
Brewed with a mash of raw and malted barley, oats, rye, spelt and lemon, this beer was fermented in used wine barrels with a blend of Brettanomyces wild yeasts and Marla Bakery’s San Francisco sourdough yeast. The finished beer is dry-hopped with tropical Mosaic hops. This unfiltered ale is alive in the bottle: drink fresh for a bright, passionfruit aroma or age to develop the wild yeast funk.

Clear gold, white head. Nose is full of citrus. Taste is sour, lemons and lime upfront. Kind of offensive sweetness midway that disappears as quick as it arrived. Light to medium body with ample carbonation.

375ml bottle pours out a hazy straw color topped with a small head. Nose is funk citrus floral notes a nice bread dough and white grapes. Taste is more of the funk bread dough plenty yeast and the floral notes.

4/3/15. Bottle shared by Tim, I believe. Hazy yellow pour with a nice khaki head, good lacing. Interesting aroma, light funk, lemon peel, super doughy maltiness, reminds of raw pizza dough in a way. The flavor is the same way - lemon, light funk, some grassy bitterness, very doughy. Almost reminds me of a lemon pie with undercooked crust (and less sweetness of course). Interesting.

UPDATED: JUL 18, 2015 375 ml bottle poured into a Spiegelau tulip. Batch #1 bottled in February 2013. Hazy golden yellow with 4 fingers of slow fading off-white head. Aromas of yeast, funk, light citrus and tropical fruit, some floral notes. Tastes of citrus and tropical fruit, doughy and wheaty yeast, floral notes, funk. Medium-light body with a dry finish. Seems more saison than wild ale to me.

Bottled. Pours hazy golden with a small off-white head. Aroma of yeast, hoppy notes, white wine, funk and spice. Sweet flavor that ends up dry and with a hint of bitterness. Medium bodied, oily texture and soft carbonation. A very nice Ale indeed. 🌟🌟🌟🌟

This poured a murky orange color with a white head. Aroma was of caramel malt, light brett. Flavor similar, sweet, no remblence of a sour, moldy tea. Bleh.

Bottle shared by HornyDevil. Pours a hazy pale yellow with a white head. No hops left here in the aroma. Aroma is Brett and sourdough. Taste is one note, dry and slightly bitter. Not too impressed here.

Had this at an Almanac tap takeover at Uncle Henry’s Deli in Downey. This was my least favorite of their beers (which I loved). Very bitter. Some flavor of burning rubber. Drinkable, but not enjoyable.
