Sauer is an American Wild Ale bottle conditioned with Brettanomyces Bruxellensis. This special yeast gives malty beer a pleasant sourness.

Split a ten-month-old bottle with Derrick at the Alpha tasting room. Hazy golden colour with thin but persistent white foam, lots of lace. This began as a basic APA fermented with regular ol’ American ale yeast, but then primed and bottle conditioned with Brett Brux. Now, nearly a year later, it has developed some very cool farmhouse traits. Tart, acidic, slightly sour, spritzy carbonation and aromas reminiscent of sparking lemonade, slight barnyardy funkiness, very dry finish. Low gravity and low body. Not as complex as a Belgian lambic, but it doesn’t claim to be. Taken on it’s own merits, it’s tasty and refreshing. Try it for yourself.

Sampled at a STL tasting - Pours pale yellow with a small white head. The aroma is quite watery with notes of wild yeast, some fruitiness and sweet tarts. It has a light crisp body with not a lot to it. The taste has lots of brett, mild fruit and water. This beer was accurately described by someone at the tasting as brett water.
