COMMERCIAL DESCRIPTION
Ale brewed with mustard seeds and aged for 6 months in Calvados barrels that contained cognac for 10 years and calvados for 8 years. The barrels were found at a local farm in France.

Gushing bottle. Cloudy blond color. Light aroma of malt and wallnuts. Sweetish malt flavor, with light Calvados and nutty touch. The alcohol can be clearly perceived. Good but a bit boozy.

Bottle... Poured hazy golden with a white head. Barf-like, solvent, chemical with some hard liquor and even a scotch-like tone. Some funk and a hot finish.

Draft at Farmers’ Cabinet. Pours a hazy pale golden orange color with golden yellowish-apricot hues and a two finger frothy white head that slowly settles into a lasting ring. Chunks of lace left behind. Sweet boozy aroma with a strong barrel character. Hints of earthy oak, vanilla and brandy along with some funky yeast, mustard seed and citrus fruit. Medium bodied with a nice combination of earthy oak, zesty spice and boozy heat. Lots of spice especially coriander and pepper up front countered by earthy oak, vanill and prominent boozy sweet brandy. Althought the spirit flavor is prominent, it’s not too hot making it pretty quaffable. Sweet citrus notes with more of a pronounced mustard character than the base version. Spicy finish with lemon and orange peel toward the end of the swallow with a nice warm finish.

750mL bottle from Leuken’s Oldsmar. Pours a hazy yellow with orange highlights and a swirl of white head. Nose is sweet malt, mustard, cognac, some barnyard, and some booze. It has distinct sour qualities to it that make me think it might have brett, but after exploring the beer a bit more, I believe it is more of the combination of the barrel with the mustard seed. Flavor is musty, malt, bretty quality, oak, cognac, and some tartness/ vinous quality. Calvados is nowhere near as pronounced as I anticipated for the stamp on the bottle. More cognac than calvados comes through. Light to medium-bodied and a strange take on this one.

The aroma is alcoholic with malt and a hint of mustard and earth. The taste is like the aroma with the mustard in the finish. The appearance is golden. Overall interesting and it’s one of those beers that grows on you.

Dry blonde with hints of orange-peel bitterness and light apple-alcohol calvados tones. Hazy orange in color with a slight white head. This was a pretty enjoyable beer!

On tap at the 2011 Max’s Belgian Fest: Pours a clear deep golden amber with a spotty-lacing ring of white bubbles. Has a big complex sweet cognac and oak nose with light fruity toffee. Starts with pretty good fullness and mild carbonation with light grape and apple fruitiness before a thinner warming finish. Pretty unique and complex brew, but could be a little more drinkable.

Bottle… Cloudy peach-colored ale with a small, creamy, white head. Good retention. Odd bouquet - spicy, salty, herbal and earthy. Medium-bodied with an oily mouthfeel and prickly carbonation. Like the aroma, the flavor is odd, but enjoyable – herbal and earthy. Spicy mustard seed, anise, coriander, earthy hops, light acidity and a touch of salt. Finishes earthy and herbal. Strange brewery, this one. Lots of hits, misses and almosts. Always off-center.
