COMMERCIAL DESCRIPTION
Ale brewed with mustard seeds and aged for 6 months in Calvados barrels that contained cognac for 10 years and calvados for 8 years. The barrels were found at a local farm in France.

Hazy amber with no head. Sweet aroma with toasted malt, calvados, plums, alcohol and ripe fruits. Flavour was sweet with malty, caramel, fruits and alcohol notes. Finished sweet and boozy.

750ml bottle. Poured a medium golden color with a smaller sized head. Aromas of oaky woodiness, fruity, and yeasty. Tastes of more fruitiness/apples, yeast, some funkiness, spicy, lighter wood, and yeasty. Alcohol burn in the finish.

Interesting beer, though not entirely successful. The calvados barrel comes through with mostly sharp, boozy notes. Some green apple is lurking in there, but it’s just a bit harsh and mostly mixes in with the general fruitiness of the beer, which may be from the barrel - hard to tell. Aroma is a bit medicinal. Mustard is also fairly subtle and I mostly picked it up in the taste. Some caramel malt, some spice. Fairly dry. Mouthfeel is a tad thin but still pretty good. Not a bad looking beer - a cloudy yellow with a fizzy, dying head.

Tap. Pours hazy tawny with spare head, flat retention. Aroma is heavy malt (cookie, caramel, toasted), light hops (woody), and average esters (apple/pear) with notes of wood, alcohol, dates, brown sugar, maple syrup, and vanilla. Flavor is heavy malt (bread, cookie, caramel, toffee), light hops (woody), and average esters (apple/pear) with notes of wood, alcohol, dates, brown sugar, and vanilla. Full body, high warmth, low carbonation and creaminess with a dry finish.

Bottle… Cloudy peach-colored ale with a small, creamy, white head. Good retention. Odd bouquet - spicy, salty, herbal and earthy. Medium-bodied with an oily mouthfeel and prickly carbonation. Like the aroma, the flavor is odd, but enjoyable – herbal and earthy. Spicy mustard seed, anise, coriander, earthy hops, light acidity and a touch of salt. Finishes earthy and herbal. Strange brewery, this one. Lots of hits, misses and almosts. Always off-center.

Clear amber coloured beer with small white head and no carbonation. Malty alcoholic aroma. Full slight sparkling palate. Finish is rather dry bitter with spicy fruited hints.

1/27/2011: Alvinne The Oak Melchior (Ale brewed with mustard seeds and aged in oak [Calvados] barrels)... Aroma: Crisp, tart, alcoholic; funky and herbal with just a tinge of sweetness. Appearance: Murky deep gold color; thin off-white ring of foam around the edges. Flavor: Sweet, pale malts in the front with fruity undertones; lots of alcohol through the nose; dry, oaky and herbal from the middle through the finish; unfortunately, I can’t pick out the mustard seed... Palate: Medium-full, not really smooth - PASTY is a good way to describe it, but not bad; slightly sticky on the lips. Overall: Pretty good, but I would have liked to have the mustard seed show through to really make this one unique.

Mustard nowhere. Pours brown ruby with little head. Very Belgian strong with sweet candied fruits, plum, caramel, nutty malty ness, sweet with a drying oaky finish.
