Danish: Hvem Xiquic egentlig var kan være lidt vanskeligt at forklare i korte vendinger, men de heltmodige tvillinger kender vi alle: Wayne Wambles og Jacob Storm - chefbryggere på henholdsvis Cigar City Brewing i Tampa, Florida og så her hos os på Amager Bryghus. Siden sit første besøg på bryghuset tilbage i 2011 har Wayne været lidt af et idol for os. Vi har nemlig svært ved at forestille os nogen, der er mere dedikeret og kompromisløs i sin tilgang til brygning - og det kombineret med ægte passion og sans for detaljen. Derfor var det en stor ære, at Wayne tog imod vores invitation om at brygge hos os - og det endda på hans fødselsdag! Opskriften blev skabt gennem en endeløs række e-mails. Cigar Citys signatur-ingrediens - cedertræet - blev bestilt hjem og en fødselsdagskage blev bagt. Det blev en sjov dag - og vi håber at du vil have det sjovt med at smage denne dobbeltmæskede cedertræslagrede peber Imperial Stout - ja intet mindre. Det er lidt af et bæst - men et blidt og venligt bæst.

English: Who Xiquic was, is a bit hard to explain - but we all know the hero twins: Wayne Wambles and Jacob Storm - headbrewers of Cigar City Brewing in Tampa, FL and Amager Bryghus, Denmark respectively. Since his first visit at Amager back in 2011 Wayne has been quite the idol for us. We don’t believe it’s possible to find anyone with a bigger heart in brewing - combined with the utmost passion and sense for detail. Therefore it was a great honor to us that Wayne accepted our invitation to come brew at Amager Bryghus - even on his birthday! A recipe was created from what seemed like an endless stream of emails. The Cigar City signature cedar wood was ordered and a birthday cake was baked. We had a fun day - we hope you’ll have fun enjoying this double mash cedar infused black pepper Imperial Stout, yeah, no kiddin’. It’s a bit of a beast - but a gentle one.

Ingredients: Water. Malts: Pale, Crystal Rye, Crystal 50/100, Crystal 70/140, Crystal 100/200, Black, Chocolate Rye, Roasted Barley. Cedar, Black pepper. Hops: Citra, Centennial, Chinook, East Kent Goldings, Herkules. Yeast: UK-ale.

Cunningham (4000) - Halden, NORWAY - APR 10, 2014
Appearance: Black color with a frothy tan head. Lovely lacing.
Aroma: Mocha, chocolate and spicy.
Palate: Medium to full body. Tad sweet, and an ok bitterness. Soft to flat carbonation.
Taste: Chocolate, dark malt, coffee and SPICY.
Overall impression: Nah….the aroma was inviting when it was warm and just spicy when it was chilled. The flavor was nice and spicy when it was chilled, but horrible when the temperature rised. Reminded me of Fernet Branca. Not good.

Bottle, courtesy of fonefan, MANY THANKS. Today I had quite a bad day, but this one really made my day. Pours dark brown/black color, dark brown head. Aroma of coffee, chocolate, roasted malt, sweet, bit hoppy. Taste is coffee, lightly bitter, medium sweet, dark chocolate, medium hoppy. Nice coffee bitter hoppy finish. I really like this one.

Flaske: Kulsort let grynet øl med et stort skumhoved. Grynet tekstur ovenpå en duft af tung chokolademalt og en anelse chili. Smagen er domineret af chokolade der bakkes fint op af en let brændende chili. Grynet tekstur trækker lidt ned. Næsten for meget, men så alligevel ikke.

UPDATED: APR 7, 2014 Bottle. Dark body, tall to medium beige head. Aroma describes a freshly made woodpile surrounded by some wildflowers. Dry taste with strong notes of wood; pepper is used reasonably and I’m glad for this. Sweet finish with more wet wood and sawdust. It’s like chewing on an ice cream stick that still has some chocolate icing on it. Peculiar but in an intriguing way.

[Drack den på Malmö Öl och Whiskey festivalen 2014] kände direkt cederträdet! Dominerande i aromen. I smaken är den lite mer avvaktande.

Bottle from a friend. Black color, brown head. Bitter taste with coffee, sedar, ashes, dark fruits and roasted malts. Bitter finish with hops, roasted malts and ashes. Good imperial stout, although a bit funky and overpowered by sedar / ash aroma.

Sehr dunkelbraunes Bier mit schöner beigen Schaumkrone. Geruch intensiv röstmalzig, schokoladig, Toffee, Kaffee. Geschmack sehr röstmalzig süß, schokoladig, Kaffee. Wunderbares Imperial Stout.

500 ML into a teku Black, black and black some more. Not as much viscosity as other CCB stouts have though. Light brown head that holds shape pretty well before falling to a thick collar. Just bits of spotty lacing. Nose is pretty neat I think. Cedar, ground white and black pepper and soft milk and dark chocolate. Pepper stands out well. Taste is a lot of cedar followed by chocolate, roast grain, and some flashes of black pepper. Am I eating or drinking? Medium bodied, light carbonation. Finishes very dry with a lot of cedar and white pepper. In the finish get a lot more of the roast grain in the dryness. Not as thick or chewy as other CCB stouts are. Much thinner than a Marshall Z or a Hunuaphu would be. It is a collaboration so that is ok. If this was suped up to 11 or 12% this would be a beast. Nice beer
