Danish: Vi bryggede denne lambic helt tilbage i juli 2009 på vores gamle brygværk. Basisøllen undergik en ret kompliceret mæskning og blev derefter kogt med gammel humle. Så lagde vi øllen på Bourgogne-fade i hele 3½ år tilsat en surølskultur, som rummede hele 3 Brettanomyces-stammer og en hel del andet godt. I 2013 vækkede vi øllen fra dvalen ved at tilsætte friske bær, som den derefter er lagret med i 3 måneder. Vi er glad for friske bær, men kan ikke anbefale nogen at købe dem midt om vinteren - ever!

English: This beer was brewed a very long time ago on our old system, July 8th 2009 to be precise. The base lambic underwent a rather complex mashing and then had a boil with old hops. Then we put the beer to rest for 3½ years on a Bourgogne barrel adding a sour blend containing 3 different Brett strains – and all sorts of cute bugs. In early 2013 we woke up the beer by adding fresh berries, and put it back to rest for another 3 months. We love fresh berries but cannot recommend anyone buying them in the middle of the Danish winter.

On tap at CBC 2013. Pours a hazy ruby with no head. Quite bitter with a mellow sweetness. Aromas of blackberries with hoppy notes of citrus fruits. Medium bodied. No carbonation. Bitter finish.

Keg@CBC2013 Deep pinky color, small pinky head. Tart fruity nose, can’t get any specific berries. Medium-bodied. Tart, sweetish, with same yeast flavor than other lambicus but "old socks" are not so evident.

Frisk syrlig lukt med preg av syrlige bær, eddik, sitron, korn, syregras. Frisk syrlig smak med preg av eddik, korn, karamell, syrlige bær, syregras, litt maling. Middels bitterhet som set godt. Grei.

Tap at Copenhagen Beer Celebration 2013 - Day 2, Session 2. Pours cloudy red with a fine, white foam head. Jammy fruit aroma with light butter and corn flakes. Big sour flavor, some vinegar, tart berries. Light bodied with average carbonation. Acetic, brash finish with more mild vinegar and lightly jammy berries. Not excellent. May have been a bit rushed.

Draught @ CBC 2013 [ Blue Session ]. - Copenhagen Beer Celebration 2013, Sparta Hallen, Gunnar Nu Hansens Plads 11, 2100 Copenhagen, Denmark

Hazy medium red - pink colour with a average, frothy, good lacing, mostly diminishing, white - pink head. Aroma is moderate to light heavy blackberry - blackcurrant, baking east, band-aid. Flavour is moderate to light heavy sweet and light light acidic with a long duration, lacto, blackberry, yeast. Body is medium, texture is oily, carbonation is soft. [20130504]

CBC. Tired rating! Clear pink beer! Small pink head! Light crisp palate. Worcester sauce sour fruit. A little of that weird toasted hazlenut that plagued it;s siblings, but not so bad here. Crisp sour finish.

Draft @ CBC 2013. Pours a slightly hazy deep reddish color with a small white head. Has a fruity spicy bretty acidic blackberry aroma. Fruity malty woody sour tart bretty blackberry flavor. Has a sour tart woody blackberry finish.

On tap @ Copenhagen Beer Celebration 2013. This is a really hazy almost milky - red colored thing, not a head what so ever. The aroma has a nice sour fruitiness. Would not go as far as to say blackberries, more red currants and lime sourness. More sourness in the flavor, actually not all that bad. Strong sweet, but it’s tried to being balanced by a sharp lime acidity. Feels quite grainy and starch-like unfortunately. Except from the strong graininess this would be really fruity, acidic and good. To bad the starch is kinda ruining it. 04.05.2013

Draught @ CBC 2013. Pours murky red with virtually no head. Aroma is dark berries, barnyard, acetone, sulphur, wood and vinegar. Taste is light+ sweet, light bitter and light+ tart. Body is light+. Finishes sweet and tart.
